When it comes to cooking, I can be a total jerk to myself, and almost always nitpick about something.
But damn, these may be the best darn #tacos I've ever had! And the day after they're even better!
Whole spatchcock (he he he) chicken, marinated for two days in a mango & coconut #Kefir, mixed with a Mexican chipotle marinade. Then done on the #traeger for an hour.
Topped with a modified version of @chelseasmessyapron "Mexican Street Corn" topping (accidentally put lime juice instead of lemon, which works. And grilled up some onion and jalapeños, as well as whole corn). And with a little bit of queso fresca to finish it
