Nothing like a big bowl of #vegan sweet potato mac and cheese for my post workout lunch! .
1️⃣ Peel 1 sweet potato, cube, and steam for ~15 minutes (or until it softens)
2️⃣ Add the steamed sweet potato cubes to your blender/food processor with 1/2c cashew milk, 2T nutritional yeast, 3T lemon juice, garlic and herb seasoning, and salt/pepper to taste.
3️⃣ Add your cheesy sweet potato sauce creation to your cooked pasta and enjoy!
