It’s hot down here in NC and I’m running around all day in it. By the end of the day I’m tired and sweaty and I don’t want to turn on the stove and cook. Don’t you agree! No way am I going near any heat. But I’m hungry so I threw together this chickpea salad. So good! All you need is Chickpeas, onion, celery, carrots. Dice all that up into tiny bits. Then add some vegan mayo, salt, pepper, dill pickle relish, and some dried dill. Throw together a sandwich with some greens and in 10 minutes you have dinner! My kids love this salad and so do I! 💕💪👍😋. What is your go-to no oven quick meal?????
