2 cups almond meal
1/4 cup coconut flour
1/4 cup chia seeds
1/4 cup flax seeds
1/4 tsp unrefined sea salt
1 tbsp Apple Cider Vinegar
5 whole eggs
1/2 cup pumpkin purée
2 tsp Pumpkin pie spice
Line a loaf pan with parchment paper
Preheat oven to 350 F 🔥
Place all ingredients in bowl of food processor.
Pulse until just blended.
Pout batter into Loaf pan.
Too with handful 🤚 raw, unsalted pumpkin seeds.
Bake for 30-35 minutes in hot oven.
Pumpkin Butter Recipe:
6 cups roasted pumpkin flesh
1 cup maple syrup or honey
3 Tbsp pumpkin pie spice
1/4 cup raw apple cider vinegar
2 x 2” pieces ginger root
Place all ingredients in heavy bottomed pan.
Bring to a boil, stirring to prevent sticking.
Reduce heat and let simmer for one hour. (I️ put mine on the wood stove). Remove from heat and purée in batches in Vitamix.
Store in small Mason jars
