Healthy veggie curry....
Quorn, mixed peppers & spinach curry with wholegrain & quinoa rice 😍
I had to raid the freezer last night for dinner & found a bag of quorn chicken (my daughter is veggie!) mixed peppers & chopped spinach so thought I'd make a quick basic curry!
I fried off an onion for a few minutes then added a crushed garlic clove, a big handful of the peppers, 5 'lumps' of the spinach & about 400g of the quorn. Once the spinach had softened I added 2 heaped tbsp of medium curry powder & let infuse for about 3 mins. Then I added 150ml of warm water and a tin of chopped tomatoes and I left it to simmer for about 15mins. Once it had thickened a little I added half a tin of coconut milk I had found in my cupboard (could use any cream instead) & I heated that through for a few minutes. Because I was in a hurry I served it with Uncle Bens wholegrain & quinoa rice which only takes 90 seconds in the microwave! 😍
You can add in any extra herbs & spices that you like in a curry eg garam masala, hotter/milder curry powder ect & if you don't like quorn then you can just swap it for chicken or prawns ☺
