Kuku Sabzi is a Persian ode to spring, and to the new year. In this dish, aromatic fresh herbs and sweet leeks are enrobed within golden eggs and delicately enhanced with spices, then cooked quickly but carefully to preserve their vibrant flavors, aromas, and textures. Many of these same flavors are found in the classic dishes of the Passover Seder, and in the Easter feast. It's a true celebration of life's return, and best enjoyed in good company. In this case, I was very blessed to have my dad visiting, and made this dish the centerpiece of a classic Mediterranean afternoon mezze, serving it with olives, pickled peppers, thin sourdough toasts and flatbreads, Greek yogurt with sumac and sweet onion, and fresh crunchy celery dipped in flaky sea salt.

The recipe was adapted from the wonderful @andybaraghani at @bonappetitmag, with a few variations as per usual: a big honkin' leek instead of a medium-sized one; couldn't find fresh dill or fenugreek leaves so made do with more parsely and cilantro plus a handful of fresh celery leaves. Added a bit of crushed fenugreek and coriander seeds to the mix. Mixed piquant expeller-pressed local canola ~1:1 with good spicy Spanish olive oil, throwing neutrality of oil straight out the window. Also forgot the baking soda -whoops! Maybe that's why it sliced just a little bit crumbly while still hot, but nobody seemed to mind 😉
