Monday dinner treat...Spicy Mala Stir Fry with Noodles #麻辣香锅
My kids are addicted to this dish. I prefer to cook it for them than having it outside. It’s such a simple dish to make at home. In my plate, there are Wong bok, scallion, king oyster mushroom, firm tofu, chicken fillet all stir-fried together and season in mala chili oil and light soy sauce, served with spicy Mala noodles. Recipe for noodles has been shared in my post earlier. .

Total Time : 40 Mins
Recipe :
• Boil the potatoes, Green Peas, Beans, Cauliflower together and Mash it and keep.
• In s kadai, add 3 Tbsp of Sesame oil and add Cumin Seeds, add Finely Chopped Onions, saute and Ginger Garlic Red Chilli Paste ( Soak Red Chilli in hot water for 15 mins and blend ) and cook until the raw smell moves away.
• Add Capsicum and Grated Carrot and Saute.
• Add Finely Chopped Tomatoes and cook until Mushy.
• Add the Mashed the Veggies and add little water and allow it to cook for 10 mins in Low Flame.
• Add Salt, MTR Sambar Powder, Aachi Red Chilli Powder, Pepper, Turmeric, Garam Masala, Corriander Powder and MTR Pav Bhaji Masala Powder.
• Mash all together and you get a perfect Gravy.
• Garnish with Corriander.

I love family stories. I don’t have a lot of them but the ones I do have are mostly really funny. Including this one... When my Mom came to the UK from Canada to meet her in law's (my grandparents) she asked my Grandma if she could have a salad for dinner.
My grandma being the amazing woman that she was said: "of course". My mom, so looking forward to a crisp fresh salad loaded with veggies and herbs and a drizzle of dressing sat down to dinner.
She was presented with a head of iceberg lettuce, a tomato, and a knife!
I think that’s where Britain’s reputation for crappy food came from.
Thank heavens we've come a long way since then!!!! This salad is probably more the kind of thing that she was hoping for.

🍳 Typical Breaking the Fast Meal for me: Plenty of Vegetables + Fat + Protein - Slow releasing Energy ⚡️
👉🏼 Breakdown

👉🏼 Ingredients
• 100g Mushrooms - sliced
• 100g Asparagus
• 1/2 Tbsp Grassfed Butter
• 100g Grassfed Hanger Steak
• 1/2 approx 60g Avocado

👉🏼 Recipe
1. Preheat Cast iron to High
2. Add steak to pan, reduce heat to medium. Leave for 3mins - turn over & leave for 3mins.
3. Remove and rest
4. Add the butter to pan, add mushrooms, asparagus. Cook for 3mins.
5. Slice avocado. Slice steak against the grain.
6. Add everything on and sprinkle seasoning to taste.
7. Enjoy ❤️

Staying fresh with the heatwave in Sweden with some yummy COLD drinks! Can’t believe it has been 31C yesterday and will be today, and basically an average of 27 C for the next 10 days! 🌞
This smoothie was thick, so if you would like to have it more liquid, just add in more orange juice. - 1/2 Avocado
- 2 stems of celery - Handful of frozen spinach - 150 ml of orange juice (freshly pressed is the best, I used a packaged one)
- Top up with bee pollen and some coconut flakes 🥥 •
Another heat tip, is to add in lime into your cold water to sip all day long, and drink cold coconut water, has amazing hydrating properties.

OKAY OMG wow so had 3 days off tracking and clean eating and wow I feel HIDEOUS 🙃 and it's actually cool feeling like this cos now I know my superfood smoothies and extras 🍇🍎 🥑 REALLY DO WONDERS TO MY BODY OMG 🙆‍♀️ so instead of waiting for a new day tomorrow to eat well, I cooked a well rounded meal for dinna 🥗 it's allgood to fall off the bandwagon every now and again, but it's about getting back on track and staying consistent 👊🙌
