Hop on the avocado toast bandwagon with me! If you haven’t heard of avocado toast, you’ve been living under a rock. It’s the coolest new breakfast meal in the health and wellness world. It truly does have its benefits, but I was a bit skeptical at first. I mean, I’m 100% a peanut butter toast gal. Love it. Not almond butter or sun butter. No thank you. Give me skippy peanut butter and I’m a happy gal. But, my weekly meal plan from #takebackthekitchen called for avocado toast on Saturday and Sunday. I figured I’d be spontaneous and go for a test ride on the avocado toast bandwagon

• Whole grain toast
• Half an avocado - do note that, although full of healthy fats, avocados are still very high in calories But whose counting? Not me!

Still a skeptic? So was I, but seriously, it was delicious and something different! I dare you to try something you’re not sure of. Don’t be that person that says “Oh - I don’t like (insert food here)” - but yet, you’ve never tried it. You might be pleasantly surprised

On a #whatifeedmybaby note - avocados and eggs are GREAT options for 6 months plus! Even avocado toast! These are some of the easier foods to offer your infants for first foods. Seriously, my daughter can eat almost anything I eat at 12 months of age

Avocados are a fruit, which may surprise some. They’re kind of a weird fruit though. They are mostly fat, the good kind, very low in sugar and a fabulous source of fiber. Most fruits are a great source of fiber, but generally fruits are mostly sugar and minimal fat - basically the opposite of avocados. To sum it up, they’re pretty great for you, but you should eat them in moderation

So last Sunday I made pancakes for breakfast and I made extra for my breakfast during the week. These weren’t just any kind of pancakes. They were @kodiakcakes from of course, @costco. You can pick them up at other grocery stores too

@kodiakcakes are #100percentwholegrain , have pretty basic ingredients, relatively low in sugar, up to 21 G protein per serving and delicious I might add. I mostly like them because they are 100% whole grain and still taste great. Now, the extra protein, that’s cool too, but people in general tend to get enough protein without eating “high protein” products. Now, they are more spendy than your regular box of pancake mix, but you’re getting more with these. I topped mine with a small amount of peanut butter and bananas most of the week, but today I was feeling spontaneous and sliced up the last few strawberries in our house as well - otherwise they would have gone bad. Yes, Brexley did get to enjoy these last Sunday for breakfast too
