A couple of weeks ago, I went to the most incredible little bakery in Loutolim, Goa. Run by an old couple, from their house, the bakery has been belting out these insanely buttery and crispy palmiers (fancied by Indira Gandhi, back in the day, it would seem) and several other things for 45 years! Every time the Antaos have a customer at their door, they are in essence opening up their house to them. You walk into their living room with Van Gogh reproductions on all the walls, and sample their baked goodies, and in our case, cheekily walk through their house to the kitchen to stare in awe at the wood-fired oven and breathe in the mesmerizing aromas of butter and flour.
Their magic cookies - super caramelized meringues - are little chewy drops of heaven. If you're ever in Goa, and in the south, find Jila bakery! You will be happier for it, I can assure you.
