Check out this kale salad and homemade dressing submitted by Anne Tedford- Heights resident! It's sure to be a spring essential for the table! . Ingredients: 4-5 leaves of fresh kale, washed 1/4 C slivered almonds, toasted Freshly grated parmesan cheese . Strip kale leaves from stems and remove all tough pieces. Massage or knead the leaves for a few minutes to loosen it up. Tear into bite-sized pieces. Toss with almonds, dressing and parmesan. . Mustard Vinaigrette Dressing: 1 C salad oil 1/3 C champagne wine vinegar (white wine vinegar is fine too) 4 T Dijon mustard 2 T Worcestershire sauce 1 Tsp. sugar 1-2 cloves garlic, chopped Salt and pepper to taste . Mix all ingredients and shake vigorously. This is my favorite salad dressing. I use it on almost anything - often I drizzle it over broiled salmon. . This salad feeds 4-5 people as a side dish. For an entrée sized salad, use a whole head of kale. We like to add roasted vegetables and grilled chicken. It is a yummy lunch to serve for company.
