Made my Thai Peanut Noodles tonight — well, a version of them since I didn’t have ALL the ingredients. But it was 99% there. It definitely hit the spot on this dreary evening. And @stew6214 will be happy that it’s a dinner that can be served hot or cold since he’ll be taking it to work when he wakes up tonight. #dinner #thaipeanutnoodles #mealplanning

Thai Peanut Noodle Salad ‼️
Seriously recommend trying this recipe. You won’t be disappointed🌞

Ingredients:
•Organic millet & brown rice ramen noodles
•I used 4 cups of coleslaw which consisted of green cabbage, carrots & red cabbage, but you can always chop up the veggies you want
•1 red bell pepper, finely sliced
•Chopped cilantro •1 tablespoon of jalapeño, finely chopped
•Presoaked roasted almonds
Thai Peanut Sauce: 3 thin slices of ginger. I sliced off some of the skin of the root before blending •1 garlic clove •1/4 cup peanut butter ( or sub almond butter!)
•1/4 cup of orange juice (or you can juice an orange) •3 tablespoon lime juice
•2 tablespoons soy sauce •3 tablespoons pure honey •3 tablespoons of olive oil (sesame oil would work better but I didn’t have any)
•1 tsp of cayenne pepper
Instructions: Cook rice noodles according to directions on package •Drain and rinse with cool water and set aside
•In the meantime, blend peanut sauce in a food processor until smooth •Place coleslaw mixture, bell pepper, cilantro and jalapeño in the bowl of noodles and toss all together
•Pour peanut sauce on top of noodles and veggies and toss until fully combined •I garnished with half a lime, cilantro and roasted almond

Ingredients • ½ cup low-sodium organic chicken broth • 1 Tbsp. all-natural peanut butter • 1 Tbsp. reduced-sodium soy sauce • 1 Tbsp. raw honey • 2 cloves garlic finely chopped • 1 thin slice fresh ginger peeled, finely chopped • 1 tsp. coconut oil • 12 oz. raw chicken breast boneless, skinless, cut into 2-inch pieces • ½ medium onion thinly sliced • 2 cups fresh spinach (or chopped baby bok chop) • 1 cup shelled edamame • 2 cups cooked soba noodles (about 4 oz. dry noodles) • 1 tsp. crushed red pepper (optional) • 2 Tbsp. raw peanuts

Instructions:
1 Combine broth, peanut butter, soy sauce, honey, garlic, and ginger in a medium bowl; whisk to blend. Set aside. 2 Heat oil in large skillet (or wok) over medium-high heat. 3. Add chicken and onion; cook, stirring frequently, for 4 to 6 minutes, or until onion is translucent. 4. Add spinach; cook, stirring frequently, for 2 to 3 minutes, or until spinach is wilted. 5. Add edamame, noodles, broth mixture, red pepper (if desired), and peanuts; cook, stirring frequently, for 2 to 3 minutes, or until heated through.
