SCONES (GF) with SWEET COCONUT CREAM & ORANGE MARMALADE
There is just nothing like a Royal Wedding. Wow!!!! We got up early, made some crumpets and English Breakfast tea to set the right mood. The wedding was captivating and the bride looked beautiful. As luck would have it, tea time came around again and on a day like this everybody should have Scones with Cream! Happy Saturday!
SCONES (GF) with SWEET COCONUT CREAM & ORANGE MARMALADE
1 3/4 cup gluten-free all-purpose flour (you can use Bobs Red Mill Baking flour 1 to 1 or Cup4Cup)
1 tsp Baking Soda
3 tsp Baking Powder
2 tsp fine Coconut Sugar (you can make sugar fine in your Vitamix or Blender)
1/4 tsp Salt
6 tbsp cold salted Vegan Or Grass-Fed Butter + 2 tablespoons melted butter/vegan butter to use after baking.
1 cup Kefir or Yogurt (I use Almond or Coconut Milk Yogurt)
INSTRUCTIONS
•Preheat the oven to 425°F. Place greased parchment paper in baking sheet. •Stir together the dry ingredients. •Cut cold butter into small cubes and cut into the flour mixture with a pastry cutter (pastry cutter works best. You want Butter to stay cold)
•Work in until mixture resembles coarse crumbs. •Stir in Kefir or Yogurt. •Dust clean surface with GF Flour. Roll out dough into a disk that is about 3/4 in thick. Cut out dough with a 2-in round cookie/biscuit cutter and place rounds on prepared baking sheet.
•Bake scones about 12 minutes, until golden brown. Remove from oven and brush with melted butter.
SWEET COCONUT WHIPPED CREAM
2 cans Coconut Cream (I like #thaikitchen brand because it gives the best results for whipped cream)
2 tablespoons Maple Syrup
1 teaspoon Vanilla Extract
INSTRUCTIONS
Place cans of Coconut Milk in fridge the night before so cream can get firm overnight. •It will separate from the liquid. •Scoop out only the cream and add to mixing bowl. •Add rest of the ingredients for the cream. •Use whisk attachment for mixer and whisk on high for 2 to 3 minutes till creamy and fluffy. •Place in fridge till ready to use.

Gai Pad Med Ma-Muang Himapan (Stir fried chicken with cashew nuts)
Ingredients:
120g.skinless chicken
1 onion,cut into 1 inch square
1 bell pepper,cut into 1 inch square
1 tbsp.dark soy sauce
1 tbsp.soy sauce
1 tbsp.sugar
1/4 tsp.ground white pepper
1/4 tsp paprika
1/2 tbsp.garlic,finely crushed
2 tbsp.cashew nuts,roasted
6 dried red chillies 🌶 fried
1/4 cup chicken stock or water
2 tbsp.vegetable oil Cut the chicken into bite size pieces.Heat the oil in a wok.add garlic,gently sauté until lightly colored to flavour the oil.add the chicken and stir until cooked through.add dark soy sauce, stir well.then combine 1/4 cup of water and stir fry until mix well.season with soy sauce,sugar and white pepper .continue to stir fry for a minute.add the onion paprika.finally add the roasted cashew nuts and fried chilies 🌶 Gently toss to combine and ready to serve, *serve with Jasmine rice 🍚 😋

Gaeng Karree Gai Nai Pa-ob Mun (Dry yellow curry with chicken in potato cup)
Ingredients:
80 g skinless chicken breast, minced
2 large potatoes
2 tbsp. Onion, diced
1/2 cup coconut milk
1-1 1/2 topspin. Yellow curry paste
1 red chili 🌶 seeded and thinly sliced
1 coriander leaves picked
1 tbsp. Sugar
1/2 tsp. Salt
3 tbsp. Breadcrumbs
1 egg, only yolk
Oil,for deep frying
Cucumber pickle:
2 small cucumbers , sliced
1 shallot,thinly sliced
1 yellow chili,cut into 0.5 cm.slices
5 tbsp. Vinegar
2 tbsp. Sugar
1/2 tsp salt
1 coriander, leaves picked To make dry yellow curry, put the coconut milk into a saucepan. Add the curry paste,stir until blended and bring over low heat. When the mixture is warm, add the minced chicken. Stir until it turns white and cook through.Add the onion and cook for 3 a couple minutes. Season with sugar and salt. Bring back to a boil again then remove from the heat. Set aside and keep warm. To make potato cup. Peel the potato and soak in salt water for 2-3 minuets. Cut each potato 🥔 into half crosswise.Scoop out the center and carve into small cup shape. Steam over medium high heat for 8-10 minuets or until the potatoes are cooked. Remove from the heat, allow to cool. Coats with the yolk then coat with the breadcrumbs again. Set aside. Heat the oil in a saucepan or fryer over medium heat. Fry the potato cups, turning regularly, until crisp and golden. Drain on paper towel. To serve, place a spoonful of dry curry into each potato cup. Garnish with coriander leaves and red chili 🌶 Arrange to a serving platter. Serve with cucumber pickle.
