Not the overnight accommodations one was hoping for heading into the weekend. I landed myself in the overnight clinic due to HGE. ๐Ÿค• Thank goodness I am under the wonderful care of Dr. Rosenthal along with the fabulous nurses. After a night of fluids I should be ret to go and hit my happy place CT. Happy Cinco De Mayo ๐Ÿฅ‘๐Ÿ’ƒ๐Ÿผ๐ŸŒฎI'm writing this post from my bed and I may remain here the rest of the day. Spin class was amazing but I sure am feelin it in all the places! Also thank you to everyone for the support and encouraging words. It meant so much to me and I'm so excited to get back into working out and continuing to improve my health. Speaking of spin here is a spin on some tacos for you... last night I made #paleo Buffalo Chicken tacos and they were soooooo freakin good! I also made a nacho version with @sietefoods tortilla chips and they were ๐Ÿ’ฏ boyfriend approved!
Here's how: in the slow cooker I added 1 lbs of #organic boneless skinless chicken breast, 1/2 diced onion, and 1/2 cup @stevespaleogoods wing sauce. I cooked on low for 7 hours. Once cooked I shredded the chicken, added about a 1/4 cup more sauce and let it cook on warm for another 10 min. Meanwhile, I preheated my oven to 350. I placed my @sietefoods almond flour tortillas over 2 prongs of the oven and baked for 5 minutes. This makes the shells crispy and firm so they can hold all the yummy filling. I got this idea from @rachaelsgoodeats and it turned out great! I then filled the tacos with the buffalo chicken, purple slaw (shredded purple cabbage + @primalkitchenfoods ranch), sliced carrot, avocado, cilantro, scallion and some lime juice.

Traveling is something that used to make me anxious and I would avoid all together because of my Ulcerative Colitis. I would worry about what I would be able to eat and if there would be bathrooms etc. Ive made it a priority to not let my UC hold me back from living my life. Although traveling can be challenge one thing I've learned is to plan ahead and to pack lots of snacks/supplements! This may seem like a ridiculous amount to pack for a trip but it's worth it for peace of mind! Plus I fit it all into one small lululemon bag... not bad

Ok the essentials...
I always bring a variety of bars for snacking including @larabar @rxbar @healthwarrior . These have super clean ingredients
โ€ขEssential oils- I use a good vibes roller which is a combo of lavender, frankincense and stress away. I also use a tummy roller which has peppermint oil and digize. These were specially made for me by @emotionoilwellbeing and they are amazing. I use them every night before bed. Its so important with my UC to manage my stress and keep my tummy calm and these oils help a TON with that. (Message @emotionoilwellbeing directly if you are interested in essential oils) โ€ขCollagen packets- I use two a day. I put them in my @yogitea tea in the morning and night time
โ€ข Chinese herbs, teas and vsl3 probiotics. These are all the things that keep my tummy in check. If you bring Vsl probiotics make sure you have a refrigerator
โ€ข @eatingevolved Coconut butter cups and @purely_elizabeth Grain free granola. I always get a sweeth tooth when I travel and it's hard to find refined sugar free sweets so I bring these as back up. โ€ขalso a variety of Nut butters @justins @eatnuttzo, bananas macadamia nuts, @jilzcrackerz @gtskombucha For the flight and Melatonin to help me sleep.

๐Ÿ“ธ+repost @thetendertummy Happy #toasttuesday everyone! Today I decided to try something new and made turmeric poached eggs on some avocado #glutenfree toast. They are so easy to make and I love the bright vibrant color! Now off to catch a spin class!
Here's how I did it: Heated a pan of water to a simmer. Add 3 tbs of white vinegar and a few dashes of turmeric. In a small bowl I cracked one @vitalfarms #pastureraised egg. ( this makes it easier to pour in). Once water is simmering I created a whirl pool with my spoon. This helps keep the egg from sticking to the side of the pan. Dropped the egg in and cooked for 3 minutes. If you want a firmer yolk cook for 5. That's it!

This Cobb salad is ๐Ÿ’ฏ! Anything with bacon and avocado is already amazing but the star of this show are @terrylinsmith organic tomatoes! They taste like candy and I can't stop eating them!!! Here's what's in the salad ๐Ÿฅ— @iloveorganicgirl butter, plus lettuce + 1 hard boiled @vitalfarms pastured raised egg + 1/2 half avocado + 3 slices @pedersonsfarms no sugar added bacon + tomatoes + @tessemaes ranch. Ps: I know butter lettuce isn't typical for Cobb salads but I like to use it because it's less rough than other lettuces which = easy on my tummy. Gettin FIGGY with it today for breakfast! 2 sweet potato slices that I baked in the oven at 400 for 20 minutes with some avocado oil. I topped them with @co_yo_usa mixed berry coconut yogurt, fresh sliced figs, almond butter, pistachios, and sea salt. Salty and sweet perfection!!!

Happy hump day! Starting this morning off right with a Vegetable Frittata and some berries! Veggie frittatas are a go to breakfast for me because I mean first Im eating veggies for breakfast which is a total win! I also make extras so I have it for breakfast the next morning. Double win

Preheat broiler to high. Heat a small non stick skillet to medium heat. Add any leftover veggies to the pan with 1/2 tablespoon of ghee. Heat up for a few minutes. Whisk together 2 eggs, 1 tsp nutritional yeast and 1/2 tsp dried Italian seasoning. Add to the pan and cook for 1 minute. Put pan in the broiler and bake until brown and puffy. About 4-5 minutes. Enjoy!

Back when I was a college athlete I ate anything and everything I wanted. I remember after late night practices one of the only place open was Panda Express. You walk in and you can immediately smell the oh so sweet and sour Orange Chicken. Soooo good. Thinking about it now gives me a stomach ache but I do still miss that saucy goodness. Here I created a #whole30 version Orange Chicken that has minimal ingredients but all the sticky sweet goodness of your fav chicken. The perfect pizza crust needs to be both crispy and able to hold a lot of toppings. The challenge with a lot of veggie crusts is they come out soggy or bland. With a few tricks I've come up with a crust that is super crispy and can hold a mountain of toppings. Plus it's made out of broccoli and #paleo. After a weekend away it feels good to be back home and eating a home cooked meal. I started my meal prep for the week on the grill. Here's how

Preheat the grill to 375. Seasoned salmon with olive oil, Dijon mustard, and Italian seasoning. Grilled on each side for 5 minutes. For the zuchinni and mushrooms I sliced them and put them on skewers. Seasoned with avocado oil, Italian seasoning and salt. Grilled on each side for 5 minutes. I served the grilled salmon and veggies on top of butter lettuce with half an avocado and chipotle @bitchinsauce.

I usually put collagen in my matcha or smoothies but today I was feeling creative! This morning I whipped up some collagen filled Banana Protein Pancakes with Mixed Berry Compote. The Pancakes are #whole30, protein packed and only contain 4 ingredients. Best part is they make my tummy happy ๐Ÿ˜˜๐Ÿ‘๐Ÿผ

Here's how: in a bowl I mixed together 2 @vitalfarms egg+ 1 scoop @furtherfood collagen +1 mashed banana+ 1/4 tsp cinnamon. I heated some coconut oil in a pan over medium heat. Spooned about 2 tbsp of the mixture for each pancake and cooked on each side for 2-3 minutes. I served with this berry compote on top.

Yesterday I lowered my dosage on one of my medications and I am struggling. I've got a headache, body aches and major bloating. When it comes to Ulcerative Colitis there are bound to be tough days when you don't feel your best. On these types of days I always go back to the basics and eat the foods I know my body loves. For lunch I made a bowl of some of my favorite "safe foods". I like to roast the veggies in the oven so they are soft and easy for my body to digest. โ€ข
Here's how I made it: in a pan over medium-high heat I added 1 tbsp of @fourthandheart ghee. I cooked the salmon for five minutes on each side. In the last minute I added 1/2 lemon juice and parsley. The sweet potatoes I roasted at 400 degrees with @primalkitchenfoods avocado oil+garlic powder + chili powder for 25 min, flipped and cooked for another 10. Zuchinni roasted with avocado oil+ Italian seasoning for 15 min. Carrots roasted for 35 min in avocado oil and salt.

It seems that cauliflower gets all the glory these days. It's the go to veggie for smoothies, mashes, crusts and rice. This is a shoutout to the OG cruciferous veggie, broccoli. Here I made a #whole30 broccoli crust pizza using @traderjoeslist riced broccoli, @traderjoeslist nutritional yeast, @vitalfarms pasture raised ๐Ÿณ , @traderjoeslist almond flour and garlic powder. I topped the pizza with balsamic carmelized onions, zuchinni, summer squash, figs, @traderjoeslist Prosciutto and basil. It was soooo dang good I ate the whole thing. ๐Ÿ“ธ: @williamssonoma cheese board and @shuncutlery kanso chefs knife.

I mentioned earlier this week I've started seeing a functional medicine doctor to help me work my way off meds. While I'm waiting for my hormone and food allergy tests to come in, I've started eating all Whole30 and excluding nightshades . This week I made a some #whole30 Chimichurri Meatballs. You guys have to try these! The meatballs are filled with juicy pork/beef combo and lots of fresh herbs and the chimichurri sauce gives them a fresh kick!!! I can't stop eating them! Try them as an appetizer or over some zoodles!

Good morning everyone! I switched up my usual breakfast of eggs for some Faux-meal. Yes, underneath that pile of goodies is some Banana Cauliflower Oats. Off to acupuncture and OTF! I hope everyone has an awesome day!

Last week I bought some bananas and I patiently waited several days for them to ripen so I could make banana bread. When the day came and they were ripe, a massive sweet tooth hit and laziness struck. Hence this #whole30 Banana Nut Butter Fudge ๐ŸŒ ๐Ÿฅœ was created. This dessert requires no baking and comes together in five minutes. Perfect for when you are feeling lazy AF. It's so salty and sweet. I love that it is naturally sweetened!
