Cosy night in Saturday calls for soup! Mark's choice of making Relish Mama's sweet potato, pumpkin & coconut soup certainly hit the spot. Enhanced with ginger, cumin, veg stock, kaffir lime & super ingredient lemongrass it was hearty and delicious. But the next level yumminess came from the suggestion to top with caramelised onion (brown sugar & balsamic vinegar fry up)! Mark loved the additional chili flakes topping option but Tash of course passed. Mother's Day with the family was at my sister's place this year. The winner at lunch was Mark's cook up of Relish Mama's freekah pilaf- even the kids asked for seconds! Combo of onion, capsicum, honey, freekah, currants & tomato paste were enriched with cumin & coriander seeds & veg stock. Half an hour later and we had the perfect warm & filling side dish to my sister's roast chicken- offset by tahini yoghurt. Additionally we prepared Nellie's Gold Star Roast potatoes which were jazzed up with garlic, feta, oregano, lemon, virgin olive oil & chicken stock. 2kg sounded a lot but we had none left so that's a good sign! Catch up with friends tonight at their place and we offered to bring dessert. Mark made Relish Mama's Raspberry Clafoutis or it's better alternative name we give it, Super Easy Yummy Warm Pudding! Only took about 10 minutes mixing it all up and 45 minutes in the oven. (Clafoutis: is it a cake or a tart? A famous line from play God of Carnage which Tash directed back in 2011!) Tonight's dinner was a combo of Flexible Vegetarians's roasted cauliflower with mango chutney and Relish Mama's Chicken & Haloumi parcels! The cauliflower was flavoured with garam masala, cumin, turmeric & chili powder before being roasted for 1/2 hour. A powerfully robust side to the tender chicken parcels wrapped in haloumi, sage, parsley, breadcrumbs & prosciutto. Mango chutney on the side bought it altogether. Mark loves slow cooked meals so this Lamb & Apricot Tagine from Relish Mama:Family was right up his alley to make last night but make sure you allow about 2.5-3 hours. The two core ingredients were flavoured with onions, garlic, ginger, saffron water initially and then deepened with cinnamon, cumin, paprika & turmeric. Taking it to the next level was the added tomatoes, paste, lemon zest & juice plus honey. Salivating yet? We were!! Recipe said 2 hours to cook but we gave it 2.5. The water didn't reduce as much as implied in recipe and Mark said he'd use less next time but the smells in the kitchen were delicious. Served with the suggested side of couscous, mint & coriander this was AWESOME in its hearty flavours & soft textures. Mark also made the optional minted yoghurt which was a great creamy cut thru addition. Defs on our winter rotation menu from now on as a real foodies winner and worth the effort. Home after attending the very well attended & moving local 10.30am Anzac service, Mark whipped up these little Ham & Egg Tarts from Relish Mama: Family by local Peninsula cook Nellie Kerrison in under 25 minutes. It's the chosen cookbook for our foodies bookclubs who all cook out of the same book once a year. Tasty Reads foodies focus on vegetarian was a surprise hit. With no vegos in the group some were a little cautious but the variety and deliciousness was universal! Winning dish was the Pear Cinammon cake from Modern Vegetarian because everyone got the recipe to that afterwards! Big hit for mains were the vietnamese dumplings from AWW Everyday Vegetarian. Other faves were beetroot & parsnip soup and the cornbread from Flexible Vegetarian, chickpea salad from Whole World Vegetarian and pear & walnut salad from Everyday Veg. Entree bite fave was the beeroot kefetedes with beetroot & feta dip from MV. Lack of desserts in two books was a missed opportunity.
