My latest read: The Obesity Code. I've been hearing it has garnered some interest in the medical as intermittent fasting has been shown to address insulin resistance and lower triglycerides (which are continuing goals of mine)! Going way back into #tastyreads history with this Celebration Sponge Cake from @silviacolloca Made in Italy which was my book of choice nearly 2 years ago.
This was worth waiting for as it is delicious!!!! Some slight changes to Silvia's recipe - I had heaps of custard left over so topped the cake with chocolate custard instead of cream. And I swapped the glace cherries in the recipe for maraschinos.

Tasty Reads December foodies meeting was simply delicious! Ostro, Hummus and Co, Mr and Mrs Wilkinson and Nigella's At My Table provided ample delights- Middle Eastern nachos, lamb koftis, garlic potatoes, Orange cake with fennel seed icing, Joe's meaty balls, and soft cheese foccacia. Mark repeated the spinach & pine nut scrolls and couscous salad which were a hit. Mark said dish of the night and cake of the year was Nigella's Sunken Choc Amaretto cake with amaretto cream. Tash voted the nachos wow factor! Yesterday Mark and Natasha hosted 17people for their annual thank you publisher reps Xmas lunch at their home. It's a great way to test out recipes from current cookbooks and say thanks at the same time! The spinach & pine nut scrolls, eggplant moussaka and persian love cake from Hummus and Co were sensational! The Bengali cougette dish & herby chicken tikka (with two sauce options) from @anjum_anand I Love India were big tangy winners. The vegan fennel, cabbage & carrot salad with amazing dressing from @edgarsmission Cooking with Kindness was delicious, as was the toasted couscous salad from Mr and Mrs Wilkinson. Such a special day with yummy food, great conversation and wonderful Xmas spirit. Mrs Wilkinson's toasted couscous salad was the perfect dish for Mark to make for a Xmas lunch visit today. Toasted almonds, sunflower and sesame seeds combine with feta, chives, lemon juice & parsley. Sultanas gave an extra soft chewy delight. Tossed with instant couscous this was a quick & easy dish to make in 20 minutes. I didn't have mozzarella so I subbed in a half egg. And totally forgot to sprinkle on the pistachios.

Book Bites foodies bookclub had their turn last night and it was just as yummy! Dish of the night was @justineschofield Lamb with watermelon tabbouleh salad and yoghurt- AMAZING! Tasty Reads foodies bookclub was a smorgasboard of delicious last night Mark reports. Cooking from the cookbooks of celebrity chefs @justineschofield @thebodycoach and @vallilittle there was so much love for their recipes, their practicality and their tastiness! All highly recommended! Mark's dishes of the night was Valli's pulled pork with olives and her duck salad. Tonight's winner dinner from @thebodycoach was Chicken Chorizo and Cauliflower tray bake. Best things- took under an hour to get on the table, delicious mix of the three main title ingredients with tomatoes, red onion, baby spinach, perfect reduced carb meal and Joe's herb choice for this was thyme. Worst thing- Tash bought skinless chicken so we missed out on the crispy skin! No worries, we will defs make this again because it all just works so well together. Chicken and leek gnocchi bake from Joe Wicks' Cooking for Family and Friends was tonight's dinner. One hour to make and cook it's a nice alternative to normal bake dishes that mixed the title ingredients with kale, mushrooms, & onion with mustard powder, parmesan and breadcrumbs. Loved the ingredients but maybe didn't hang all together as well as we hoped. Liked it but wouldn't make again. Five hour pulled pork with fennel salad was tonight's dish from Joe Wicks Cooking for Family and Friends. It needed a bit longer to get the pork crackling but the pork was divine as it was mixed with paprika, cumin, red onions, thyme, and orange juice. The delectable meat was perfectly offset by the fennel salad which was mixed with red onion, carrot, cabbage, mayo, carraway seeds, walnuts and white wine vinegar. So Mark was out all day watching the AFL Grand Final at a mate's and then picked up by Tash. We needed a quick dinner fix so it was Joe Wicks to the rescue with his 25min from go to woah Prawn and Cauliflower rice stir fry. Yep blitzing the cauliflower as a substitute for rice makes this a fantastic reduced carb option. The prawns, spring onion, capsicum, zucchini, beansprouts are enhanced by the light soy, kecap manis sauce (yep found this in our local Foodworks) and garlic and again cooked in coconut oil. All topped off with lime, chopped peanuts and fried egg! Another winner from Joe Wicks' Cooking for Family and Friends. This time it's lamb madras curry. Again the coconut oil with ginger, madras spice & garlic paste- chuck in onions, cashews, cauliflower, baby spinach with lentils and the lamb. 15min prep and 1hour 45min cooking. It smells delicious, and tastes even better. Extra bonus Mark says is Joe does not cook with salt or pepper- which is his preference too. Public holiday day off means Mark has time to test out recipes from Joe Wicks' Cooking for Family and Friends for our celebrity chef foodies theme. This sweet potato shakshuka made a super delicious lunch with only 10mins prep and 20mins cooking. The sweet potato was offset with kale, red onions, deli ham, chopped tomatoes and eggs. Joe is a big fan of cooking in coconut oil, and using herbs- in this case sage, chili flakes and parsley. Tasty reads foodies meeting this week were delights from The Really Quite Good British cookbook. Everyone liked the layout and easy to source recipes. Goat's cheese & beetroot relish bruschetta, babas in grapefruit syrup, meatballs, choc guiness cake, burrata with lentils, and croquettes. Mark's fave was the sticky bourbon ribs!
