Happy Monday Lovelies 💚 Jammy Egg (recipe below 👇) & Purple Sweet Potato Salad to celebrate #meatlessmonday 💜The warmer weather has me craving salads. Are your cravings shifting with the seasons too? I’m also a lot more interested in fruit these days 😍🍓 To make a salad into a meal, I always make sure to include a starchy veggie, like this Purple Sweet Potato & Delicata Squash. I also load up on healthy fats (Avocado is a fave), and high quality protein, like this Pasture Raised Egg. Last, but not least, I love a little crunch in my salad, so today I used @go_raw Sunflower Seed Sprouted Flax Snacks as paleo croutons. Jammy Boiled Egg Recipe:
Boil Egg for 7 minutes then plunge into an ice bath. Keep it in the ice bath until the ice melts. Gently crack the bottom of your egg on the counter & carefully peel off the shell. That’s it!
