It might not be #TacoTuesday but you can still enjoy Casey’s Chicken Tacos with Mango Salsa! Thanks for sharing your recipe @casey2cook
1 1/2lbs of chicken breast
3 table spoons of taco seasoning
1 large mango, diced
zest and juice of 1 lime
1/2 cup of minced sweet onion
3 tablespoons of chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon of pepper
1 tablespoon of olive oil
your choice of taco shell/tortilla
1 avocado, mashed
1. Cut your chicken into bite sized pieces, heat a large pan over medium high, spray with cooking oil. Brown your chicken, once browned add in taco seasoning. Cover and leave on low for 5 minutes to cook through.
2. Meanwhile, in a medium bowl combine the mango, cilantro, onion, lime zest and juice, salt, pepper and olive oil. Toss to marry the flavors.
3. Choose your shell/tortilla & heat, if necessary. Put a spoonful of chicken and a nice spoonful of the mango salsa! Top with the mashed avocado.
