Yield: 8 tacos
1/2 teaspoon OLD BAY seasoning
1/2 lime, juiced, more to taste
pinch of sea salt, more to taste
OLD BAY Seasoned Turkey:
1 teaspoon extra-virgin olive oil
1 pound organic ground turkey
2 teaspoons OLD BAY seasoning, more to taste
Quick-Pickled Red Onion:
3/4 cup apple cider vinegar
1/2 teaspoon sea salt
1/2 teaspoon whole peppercorns
1/4 teaspoon red pepper flakes
1/2 teaspoon coconut sugar
1 red onion, thinly sliced
1 package tortillas of choice, warmed
1 cup cheddar cheese, shredded
1 cup lettuce, roughly chopped
1 tomato, diced
1 tablespoon cilantro
1 tablespoon scallions, thinly sliced
1. Add apple cider vinegar, sea salt, peppercorns, red pepper flakes, and coconut sugar to a small saucepan. Whisk to combine. Bring the pickling liquid to a boil over medium-high heat. Take off heat and pour boiling liquid over red onion. Let cool. Cover and refrigerate for at least 1 hour before using.
2. While onion pickles, make the turkey. Heat oil in a medium skillet over medium-high heat for 1-2 minutes. Add turkey and OLD BAY seasoning. Cook, stirring often, until turkey is fully cooked and no pink remains. Take off heat and let cool.
3. Add guacamole ingredients to a medium mixing bowl. Mash with a fork and mix until well combined. Taste and adjust seasoning as needed.
4. Assemble: Place cheddar cheese on warm tortillas, add turkey, quick-pickled red onion, guacamole, tomato, lettuce, cilantro, scallions, and any other taco fixings you love! Serve warm!
