This dinner tonight was incredible! I was so tired after a long week of work, but this meal sure helped me feel better! We came out to my husband’s golf club to eat dinner for the first time and I have to say it’s been such a pleasant surprise!
I had wild caught strawberry grouper (never heard of this!) which came with avocado, celery, green onion, and a shrimp pillow (shrimp with egg whites) over a ginger broth. It seemed virtually carb-free, so I gave 1 unit of insulin for the protein and any incidental carbs in the broth. We’ll see how it works out!
