The contemporary open kitchen of @DistrictBrasserie, complete with the well-loved Spanish Josper oven blasting away, is what influenced John Vissaritis when creating his carefully designed, produce-driven menu. "We had a test kitchen for the menu items - deciding how to put the items together. The main objective was to understand the oven and the charcoal. The oven reaches 500 degrees, so we want to make sure we charcoal the meat just enough, and at the same time produce a tender, juicy centre."
