Sipping this Minty Mocktail Mojito in my backyard with the sun shining & reading a good book feels like I’m on vacation!
4 fresh mint leaves
1 packet Stevia In The Raw®
½ lime cut into wedges (wash skin before using)
12-ounces sparkling water (chilled)
Directions: In a glass add 3 mint leaves, Stevia In The Raw®packet and lime wedges and muddle together. Add ice and fill to the top with soda water. Garnish with a slice of lime the fresh mint.

The first day of spring is almost here which has me in the mood for refreshing, light and colorful meals to fuel my day! Smoothie bowls are a great way to enjoy the benefits of a smoothie while being more filling and also satisfying the need for crunch! Try my Pitaya Smoothie Bowl! The color is incredible! ⠀

Pitaya Bowl Ingredients:⠀
1 (3.5 oz) pack frozen Pitaya⠀
⅓ cup coconut milk⠀
1/2 banana⠀

Granola Ingredients:⠀
2 tablespoons ground flax seeds⠀
⅓ cup warm water⠀
2 tablespoons coconut oil⠀
2 Stevia In The Raw® packets or 4 teaspoons Stevia In The Raw® Bakers Bag⠀
½ teaspoon ginger powder⠀
½ teaspoon sea salt⠀
1 ½ cups gluten-free oats⠀
1 cup pecan pieces (or any nut of choice)⠀

Fun Toppings: 1/2 banana, ¼ cup fresh blueberries, ¼ cup flaked coconut⠀

Granola Directions:⠀
Preheat oven to 250 degrees Fahrenheit. Add ground flax seeds to warm water, stir and wait 3 minutes. Add coconut oil, Stevia In The Raw® packets, ginger powder and sea salt to flax mixture and stir together. Add the oats and pecan pieces and stir together. Pour into a thin layer on a baking sheet and bake in oven for about 1.5 hours, stirring occasionally to prevent burning. When the granola is toasted, let cool on the counter for at least 1 hour. Break apart and store in the fridge in an airtight container and use within 1 week.⠀

Bowl Directions:⠀
Add the frozen Pitaya, coconut milk and half of the banana to a high speed blender and blend until smooth and creamy. Pour into a bowl and top with the remaining banana (sliced), fresh blueberries, flaked coconut and the homemade granola.⠀

Traditional granola can be high in added sugar.
