This cold I caught is kicking my butt. I am doing all the earthy crunchy good for me "things" to toss it back to the germ sea it came from...
But in the meantime... I am still eating, though I will say it's been pretty chill meal wise around here... like we picked up soup from whole foods and I just added some more both to it and 'doctored it up' a bit... stretchin those $$ a bit farther, ya know?! Anyway.... this little bowl full of yumminess was so simple and also very satisfying!
Romaine lettuce, roasted red peppers, chopped up tomato, thinly slice sweet potatoes (I used my wide blade on my spiralizer to get nice thin, even slices)
I tossed thos with a touch of oil, and some chili lime seasoning blend, and just popped em on a lined baking sheet, popped them into a 400° F oven, stirring them around every so often...till they were done.
I made up a quick avocado dressing, tossed the salad with it and then topped it with those yummy potatoes and some raw pumpkin seeds!
