Life has been NUTS lately, and when that happens meals usually consist of grabbing whatever is closest, throwing some stuff together, and many many smoothies. So, this week I decided I finally needed to roast up some veggies, throw chicken in the instant pot, and prep some good food! I settled on smoked paprika sweet potatoes, "crack" broccoli, and BBQ chicken. What do you have going on for meal prep this week?!
