Ingredients:
-185g of unsweetened dehydrated coconut
-3 tbsp maple syrup
-1 tsp vanilla extract
-250g coconut oil, melted
-pinch of salt
-180g dark chocolate

Preparation:
Line a square baking tray with greaseproof paper.
Place the coconut, maple syrup, vanilla extract, coconut oil and salt into a large mixing bowl and, using a wooden spoon, mix until combined. 🥄

Pour the mixture into the lined baking tray and press down until compact, then put the tray into the freezer.
Melt the chocolate until smooth in a double boiler, stirring constantly. 🍫
.
Carefully pour the chocolate over the coconut base and, using a spatula, smooth it out and sprinkle on some coconut. Put the tray back into the freezer for about 1 hour. ❄

Once set, remove the tray from the freezer and slice into bars. Buon appetito! 😋

Ingredients

2 cups fresh arugula
2-3 campari or cocktail style tomatoes sliced
1/2 avocado pitted and sliced
3 slices fresh mozzarella cheese
fresh basil leaves
1 tablespoon extra virgin olive oil
1 1/2 teaspoons balsamic vinegar
generous pinch of sugar or dollop of honey
kosher salt and freshly ground black pepper

Instructions

Assemble the arugula, tomato, avocado slices and mozzarella in a serving bowl. Top with torn or slivered basil leaves. Whisk the extra virgin olive oil in a small bowl with the balsamic vinegar, sugar or honey and season with kosher salt and freshly ground black pepper to taste and pour over the salad. Toss to coat and serve.

INGREDIENTS

2 cucumber (peeled if desired)
6.5oz wild caught lumb crab meat (fresh or canned)
2 tbsp chopped cilantro
1 tsp dried red pepper (flakes)
1/2 tsp minced garlic
2 -3 tsp sesame oil (divided)
2 tsp rice vinegar (more dressing if desired)
splash of lime
1/2 to 1 whole avocado (sliced or chopped)
1 large plum
sesame seeds (optional)
sea salt / black pepper to taste

INSTRUCTIONS

1. Wash and dry your veggies/fruit. Next spiralize your cucumber or slice julienne style.
2. Peel first if desired. Pat dry your cucumber spirals so they are oversaturated with water.
3. Add spiralized cucumber to a bowl then mix in 1 tsp or more of sesame oil and rice vinegar.

4. In another small bowl, combine your crab meat, cilantro, pepper, garlic, vinegar, and 1 tsp sesame oil. Mix and add some fresh ground pepper if desired.

5. Slice up your plum and avocado.

6. Arrange all your ingredients in a large salad bowl or two small salad bowls. Season with salt/pepper and splash of lime.

7. Garnish with sesame seeds.

1 sweet potato
1/8 tsp salt
1 tsp olive oil
1 avocado
1/2 lemon
1 tomato
1 tbs hemp seeds
Steps:
1. Slice the sweet potatoes into thick slices. Bake the Sweet potatoes slices at 350 F for 25-30 minutes or until they are fully cooked
2. In a bowl, mix the avocado, lemon, and oil together until well combined. Add in the tomatoes, salt, and hemp seeds and continue to mix until well combined.
3. Add this avocado mixture on top of the baked sweet potatoes

1 15 ounce can black beans, rinsed & drained
1 15 ounce can chickpeas, rinsed & drained
1 15 ounce can corn
1 pint cherry tomatoes, chopped in half
2 medium avocado, diced
1 small can of diced olives
Juice of one lime
2 tablespoons extra virgin olive oil
1 tsp cumin
¼ tsp chili powder
¼ tsp salt
1⁄4 cup cilantro, chopped
¼ cup feta cheese for garnish (optional)

INSTRUCTIONS

In a large bowl combine black peans, chick peas, corn, tomatoes, avocado, and olives. In a small bowl whisk the lime juice, olive oil, cumin, chili powder, salt and cilantro. Add to the salad and toss ingredients until combined, Garnish with feta cheese.
