What's your favourite vegetable?
I talk loads about my love of cheese, champagne and pasta, but pretty much every day for lunch? This is what I eat.
I'm super passionate about vegetables and feel so much better eating loads of them (it kind of, crowds out the other stuff), so I am really happy to support @nutritionaustralia in their #TryFor5 campaign, encouraging people to try to get 5 different vegetables into their meals every day. ... as you can see from my plate, it is not hard even just using what's in the fridge (and a dollop of hummus). .
When M & I travel, we hit the shops for veggies and a tub of hummus and make this our lunch, too. .
This plate has left over roast pumpkin, cabbage, cucumbers, capsicum and sauteed mushrooms (add a dollop of tzatziki at the end and stir through for lazy garlic mushrooms). Oh and pickled eggplant because it's my favourite! (and guess what? I shot this freehand!). .
So I may eat all the cheese and drink all the champagne, but I'm also eating vegetables at almost every single meal, every day.
