When the weather starts changing, cooking healthy doesn't have to!!! Try this delicious chicken & autumn veggie recipe from @CookingClassy

WHAT YOU NEED
โˆž 4 - 5 (6 - 7 oz) bone-in, skin on chicken thighs
โˆž 4 Tbsp olive oil , divided
โˆž 1 1/2 Tbsp red wine vinegar
โˆž 3 cloves garlic , minced
โˆž 1 Tbsp each minced fresh thyme , sage and rosemary, plus more for serving
โˆž Salt and freshly ground black pepper
โˆž 1 large sweet potato (peeled if desired), chopped into 3/4-inch cubes
โˆž 1 lb Brussels sprouts , sliced into halves
โˆž 2 fuji apples , cored and sliced into half moons about 3/4-inch thick
โˆž 2 shallot bulbs , peeled and sliced about 1/4-inch thick
โˆž 4 slices hickory smoked bacon , chopped into 1-inch pieces

GET COOKIN:
1. Preheat oven to 450 degrees.
2. Pour 2 Tbsp olive oil, red wine vinegar, garlic and herbs into a gallon size resealable bag, add chicken, season with salt and pepper then seal bag and massage mixture over chicken while working to evenly distribute herbs. Set aside and let rest while chopping veggies.
3. Place sweet potato, Brussels sprouts, apples and shallot on a large rimmed baking sheet. Drizzle with remaining 2 Tbsp olive oil then toss to evenly coat and season with salt and pepper to taste. Spread into an even layer then set chicken over veggie/fruit mixture.
4. Sprinkle bacon (separate any pieces that stick together) evenly over veggie/fruit mixture.
5. Roast in preheated oven until chicken and veggies are golden brown, about 30 minutes (chicken should register 165 in center). 6. Broil during last few minutes for a more golden skin on chicken if desired.
7. Sprinkle with more herbs and serve immediately. ENJOY!!!!

Healthy Hearty Turkey Chili to warm the soul!

WHAT YOU NEED:
โˆž 2 teaspoons olive oil
โˆž 1 yellow onion, chopped
โˆž 3 garlic cloves, minced
โˆž 1 medium red bell pepper, chopped
โˆž 1 pound extra lean ground turkey or chicken (99%)
โˆž 4 tablespoons chili powder
โˆž 2 teaspoons ground cumin
โˆž 1 teaspoon dried oregano
โˆž 1/4 teaspoon cayenne pepper
โˆž 1/2 teaspoon salt, plus more to taste
โˆž 1 (28-ounce) can diced tomatoes
โˆž 1 1/4 cups chicken broth
โˆž 2 (15 oz) cans dark red kidney beans, rinsed and drained
โˆž 1 (15 oz) can sweet corn, rinsed and drained
โˆž For topping: cheese, avocado, tortilla chips, cilantro, sour cream

GET COOKIN:
1. Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently.
2. Next add in ground turkey and break up the meat; cooking until no longer pink. 3. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
4. Next add in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together.
5. Taste and adjust seasonings and salt as necessary.
6. Garnish with anything you'd like.
