Sunday night grocery shopping! I love it when the cashier notices what I’m buying and says “ohhhh, you must be a vegan!” @naturesfaremarkets

Food prep is done! I feel like I prepped more than this photo shows, but I guess that’s because of all the chopping! Here’s what I made (clockwise from upper left): ➡️ Cauliflower overnight “oats” made with cauliflower rice, coconut milk, chia seeds, pumpkin, protein powder, and cinnamon, and topped with blueberries ➡️ Chicken vegetable soup, on request by my husband! ➡️ Summer salad made with broccoli slaw, raw asparagus, beets, peaches, and a homemade honey mustard dressing. To be served with a salmon filet that I’ll grill on Tuesday! ➡️ Veggie packs (smaller this week because of all the raw veggies I’ll already be eating! I’ll also snack on dry roasted edamame, healthy jerky, fruit, nuts, and bone broth cartons. ➡️ Tuna salad. One of my favorite recipes made with red onion, celery, carrots, cucumbers, fresh dill, garlic, olive oil, apple cider vinegar, and lemon juice. Will serve in lettuce “boats”! ➡️ Extra roasted broccoli, cauliflower, green beans (yep, set off the fire alarm again! 🤷🏼‍♀️) What did you make this week?!?

Freezer Food! Sweet potatoes, Bananas, and avocados. For the avocados..... Step 1- cut up and steam. Steam them for about 5 mins if they are not super soft already. Step 2- purée. For 3 avocados I added about 3 oz of breastmilk. Made them nice and creamy. Avocados are such a great source of healthy fat! FOR THE BANANAS Step 1- peel and put straight into blender. Step 2- add milk or water. For 5 bananas I added 1 oz of breastmilk. Avocados and Bananas are so cheap to buy! Such an easy make your self baby food! Zero carb chicken roll up meal prep for lunch for me & hubby for tomorrow & Tuesday. I used the recipe from @skinnytaste for chicken cordon bleu roll ups but omitted the bread crumbs because keto. Could've used ground flax or crushed pork rinds, but this worked perfectly.
So, we have some chicken breasts, halved lengthwise, pounded flat and seasoned with salt & pepper
2 slices @hormelfoods natural deli ham
1 slice thin @sargentocheese Swiss cheese
Roll 'em up, seam side down on the baking pan.
Spray with a little olive oil and season with a little more salt & pepper
A serving is 2 rolls with 380 calories. Pretty not so bad!
I may serve this as is, or pair with a small side salad of baby kale, lemon & olive oil..i still count calories and need to plan breakfast, snacks and dinner to be sure a salad with dressing doesnt put me over.

Fresh ontario garlic is here and if you have never baked whole garlic bulbs you better get on it cause...Omg!! A little olive oil and sea salt then wrap in foil and bake low and slow, maybe an hour?... then squeeze out the warm mild creamy garlic to put on bread, meat, veggies or crackers. I’ve got huge goals for these next eight weeks, and being prepared with healthy food options is KEY!!!
💎 egg cups with spinach, turkey sausage, and cheddar cheese for before my workouts (I can’t workout on an empty tummy anymore)
💎 roasted veggies for grab any go lunch options

Most people might not think this is much food prep, but listen up ...
👉 breakfast is typically Shakeology or Greek yogurt with berries and granola
👉 lunch is leftovers plus my prepped veggies
👉 snack is carrots 🥕 or baby tomatoes 🍅 & a Beachbar
👉 dinners are planned ahead of time, but made that night (dinner leftovers become lunch)

MENU THIS WEEK:
➡️Jasmine rice (cauli-rice for me), roasted green beans, & grilled tofu with roasted garlic sriracha bbq sauce
➡️Rice/cauli-rice with mango habenaro chicken sausage, zucchini, and sweet onion hash
➡️Yellow tadka dal with veggies, tofu, and jasmine rice
➡️Veggie pasta with cheese sauce, peas, and broccoli

Sunday food prep - his and hers!
Keeping it simple this time.
20 chicken breast, potatoes, broccoli, omelettes, turkey bacon, and snacks of carrots fruit and nuts.
Just need to add my veg for my evening meal and protein shake when I'm training.
