Food prep is done! I feel like I prepped more than this photo shows, but I guess that’s because of all the chopping! Here’s what I made (clockwise from upper left): ➡️ Cauliflower overnight “oats” made with cauliflower rice, coconut milk, chia seeds, pumpkin, protein powder, and cinnamon, and topped with blueberries ➡️ Chicken vegetable soup, on request by my husband! ➡️ Summer salad made with broccoli slaw, raw asparagus, beets, peaches, and a homemade honey mustard dressing. To be served with a salmon filet that I’ll grill on Tuesday! ➡️ Veggie packs (smaller this week because of all the raw veggies I’ll already be eating! I’ll also snack on dry roasted edamame, healthy jerky, fruit, nuts, and bone broth cartons. ➡️ Tuna salad. One of my favorite recipes made with red onion, celery, carrots, cucumbers, fresh dill, garlic, olive oil, apple cider vinegar, and lemon juice. Will serve in lettuce “boats”! ➡️ Extra roasted broccoli, cauliflower, green beans (yep, set off the fire alarm again! 🤷🏼♀️) What did you make this week?!?
