Trading in cold summer smoothies for fall bowls filled with spice. So excited to spend months cooking with apples, pumpkin, cinnamon, squash, beets, and brussels sprouts and seeing how many of those things I can get away with adding peanut butter to. So summer is desperately trying to hang on where I live we are in the high 80's for the next week or so it looks like... ๐Ÿค” Fall?! ๐Ÿ‚๐Ÿ Anyway... made this "Rainbow Thai Farro Salad" from @sweetpeasandabcs for the sauce I subbed in maple syrup for the honey in the recipe but otherwise I made it pretty much to the recipe as far as the ingredients go, I did eyeball the measurements instead of actually measuring because that's just how I roll. For me it did need a bit of spice so I did siracha mine up after I took the pic but it was quite good for a hot day! Sushi Night @ Fit Food's Kitchen ๐Ÿฃ
This easy and versatile recipe will take away your sushi cravings in a healthier & protein packed way. - 1 large potato
- 1 cup of cooked quinoa
- sushi nori
- truffle
- cooked mushrooms
- parmesan
- salmon
- thinly sliced avocado
- @kitehillfoods spread
- low sodium soy sauce or tamari for a GF option
Boil the potato, mash and combine with the cooked quinoa to create a "dough." Transfer to sushi roller on top of 1/3 of the nori and for the Truffle Maki add the mushrooms, parmesan, and a truffle on top. For the Salmon & Avo Maki add salmon, avocado and spread. Enjoy โค๏ธ

Raspberries are my absolute favourite berry. They are delicious fresh, frozen, purred, preserved, and the list could go on. I have frozen raspberries just by themselves, a lot of nights for my dessert, but they are also great in desserts/snacks. I thought I'd share one of my favourite raspberry recipes with you. It is a healthy raspberry 'ice cream', that is super quick to whip up, and only uses 3 ingredients! A food processor works best if you want the texture more like ice cream rather than a smoothie, but a smaller blender can work as well. โ€ข
INGREDIENTS:
1 banana frozen
3/4 cup frozen raspberries (you can substitute these for any other frozen berry you like)
1 tablespoon of milk

METHOD:
1. Put all ingredients into the food processor and
2. Blitz on low for about 20 seconds then put it up to medium until it clumps together and starts to look more like an ice cream texture. If yours isn't clumping together, add some more milk until it forms the right consistency.
3. Scoop into a bowl and enjoy immediately, or put it in a airtight container in the freezer to eat later! All done! โ€ข
If your mixture is too runny, you may have either added too much milk, or your banana wasn't frozen enough. Don't worry if this happens, it will still taste good! Feel free to change the measurements in the ingredients list, they were only a suggestion/guide :) I hope someone tries this recipe or finds inspiration from it! Thank you x
