Quinoa Stuffed poblano peppers
Wow! Cant believe June is over and we’re in July, time flies so fast! I have so much things scheduled for this month and with my busy schedule I’ve had less time to prep my healthy meals, I’ve started to find short cuts in preparing food for me and my family , this is one of the recipes i go to when i literally have 15 minutes to prepare a healthy, wholesome meal and it couldn’t taste any better!

For 2 people
▫️100gm quinoa, ▫️2 poblano peppers( or regular ▫️peppers),
▫️150 gm black beans,
▫️100 gm tomato salsa,
▫️1 garlic minced,
▫️50 gm cheese( feta cheese or vegan cheese),
▫️1 tbsp olive oil
For the tomato salsa:
▫️2 tomatoes cut into ¼-inch pieces,
▫️¼ cup finely chopped onions,
▫️¼ cup finely chopped fresh cilantro,
▫️ 1/2 jalapeño pepper seeded, stemmed, and finely chopped,
▫️2 teaspoons fresh lime juice,
▫️Kosher salt to taste,
To prepare the salsa
In a medium bowl, combine tomatoes, red onion, cilantro, jalapeno, and lime juice. Season to taste with salt. Let stand at least 10 minutes at room temperature to blend flavors.
To prepare the Poblano peppers:
To Prepare the quinoa ; wash the quinoa first then drain it. In a medium saucepan over medium heat, add 1 tbsp of olive oil , salt and quinoa. Cook for about 1 minutes then add 1 cup of water, bring to a boil stirring occasionally, reduce heat and cook for another 15 minutes until fully cooked, remove from heat.
To prepare the poblano peppers; char the peppers until blistering on an open flame or you can broil it in the oven , flipping it every couple of minutes( usually 4 minutes on each side) . Once fully charred remove from heat, remove skin, make a slit and remove the stem and seeds( optional ; i kept the skin on with the stem)
To prepare stuffing mixture: Place the cooked quinoa in a deep bowl and add all the rest of the ingredients , mix well and check seasoning. Start stuffing the charred poblanos with the final mixture, top with the cheese , place one on a plate and serve
