To brine or not to brine, that is the Thanksgiving question! I'm a recent convert to brining the turkey. I don't bother with a lot of ingredients in the brine because really, it's all about the salt. Submerging the turkey in the salt water brine solution for a day really keeps it from drying out! And, it cooks much faster too. I'll add some peppercorns and a few sliced oranges and lemons too.
