Our wee baby bird is flying the nest this week :'( when we were in setup I bumped into Petrisse after years without contact, she'd just moved back to town and told me she'd been an apprentice for six years and still wasn't qualified (!!!) Yvette, ever the helper, immediately signed her on to smash out the last of her qualification. Pete's been with us from the very start, she's pulled the long hours, lived with the chaos, watched casuals come and go, contributed massively to the menu (cheesecake queen) and been a constant source of support when we've all been losing our minds with stress. Tomorrow she starts her first full-time proper grownup chef job, and while we're sad to see her go we're also so proud of how much she's learnt and grown over the past year. This isn't a real goodbye, she's still put her hand up for Saturday's and dinners, but it's going to be a lot quieter without her in the kitchen every day! Good luck to my white girl sister, you can do anything you set your mind to!
