A poached egg over shirataki noodles with spinach! I feel like I haven’t posted eggs recently enough 😜 and realized I forgot to share my newfound love of shirataki noodles with you (thanks for the tip, @dashofting!), so here’s that post! I was so hungry when I made this that I forgot to write down a real recipe, so please forgive me 😋 At least I remember the gist of it: simply poach an egg or two and blanch the spinach in the same cooking liquid. Drain the spinach and squeeze out excess water. Then heat your shirataki noodles, mix them up with the spinach and some sesame oil, soy sauce, and sriracha, top with your egg(s), and you have yourself a tasty breakfast or brunch with little effort and a lot of good nutrition! Shirataki noodles are really cool because they’re made out of yams (healthy, right?) but still have a similar texture to rice noodles. This also makes them low calorie, low carb, and high in fiber, so they’re basically the noodle for anyone and everyone! Yum, yum, yum!
