Wishing I was sitting in bed eating this rn instead of writing about gun control 😅🙃Cheers to banana ice cream (blend is cinnamon, banana, soymilk) plus strawberries from @slofarmersmarket, mulberries, crunchy pb, @traderjoes coconut chips, dark chocolate chips, and a drizzle of agave!

Pasta is not my all-time favorite dish. Don’t get me wrong, I love a mean bowl of vegan mac n’ cheese, Pad Thai, or spicy peanut noodles, but pasta is definitely not in my Top 5 Comfort Foods list. That being said, I still LOVE bean pastas—one of them being @eatbanza chickpea pasta, which is a brand I have reviewed on my blog before! 🍝
Banza’s #banzaplusplants contest for the month of May showcases how you can create all kinds of plant-based dishes using this chickpea pasta. 👏🌱 I HAD to experiment in my kitchen and see what intriguing recipe I could whip up. Low and behold, we have Gochujang penne! Okay, my original recipe was going to cook with the chickpea spaghetti noodles, but my local Lassens only had the Banza penne in stock, so please work with me on this one. 🙏🙏🙏 Anyways, this recipe has the chickpea penne noodles, a buttload of spinach, white mushrooms, and green onions in a spicy chili sauce made from gochujang, rice vinegar, tamari, a little tomato paste, and some garlic powder. Garnished with green onions and a little scorpion chili pepper flakes because I’m a madwoman, of course! 🌶😈
And is it bad that this dish was so heavenly that I ate the entire batch of pasta? So yep, now there’s a box of chickpea pasta and a whole bunch of spinach inside of me. Guess I’ll die from iron overdose—as if we vegans can’t get enough comments about iron deficiency anyways! 😂💪👊

What you usually don’t find at conventional grocery stores are local companies that manufacture their products on a smaller scale or even by hand. 👩🏻‍🍳👩🏻‍🌾👨🏻‍🍳👨🏻‍🌾 As a result, the products are a lot fresher and of peak quality since there isn’t as much distance in shipping and transportation. Today, the @slonaturalfoods market hosted a local vendors fair showcasing all kinds of local brands in California! 💚👌
I really wish I could post more pictures in this collage, so you’ll have to find the rest of the vendors in my Instastories! There will also be more in-depth reviews of everything that I can’t fit into this caption. 😙📸 But as you can see, there were all kinds of wonderful samples of brands I helped myself to. Lots of sourdough bread, salads, superfoods, chocolate, and we even get some pizza in the mix. Basically took care of lunch in a few trips! 🍓🍞🥗🍕🍫🥖

People have been creating beans on toast (more of a UK trend than a US one), which looks divine and all, but I don’t have traditional white beans or toast, so we’re going with lentils and two of my whole wheat baguette sticks! I had a third mini baguette stick after finishing this heavenly meal, but I couldn’t be bothered taking a picture. 🙈📸
What makes these lentils so special is that they are GOCHUJANG CHILI lentils that are so spicy, so rich, so filling, and so delicious. Not to mention that you’re incorporating multiple servings of legumes and fruits/vegetables in a pinch! 😋 Because I’m a crazy spice fiend, I had to garnish the dish with some (and more) @traderjoes ghost chili pepper flakes! 🌶🔥 ALSO, did you know that May is National Mediterranean Diet month? Nothing could be more suitable than heart-healthy lentils, warming spices, the flavor of the tomatoes, and some whole grains from the baguette to showcase that! 🥖🍅💛

What foods do you think emit the BEST aroma? For me, those foods are roasted sweet potato, freshly baked bread, sautéed garlic and onions, and cinnamon rolls or buns. 😍👌✨ While this pre-packaged and baked glazed cinnamon roll from @immaculatebaking doesn’t seem to match with freshly made rolls, it is pretty darn close. The dough is soft and fluffy with a sweet goody cinnamon filling and crisp sugar glaze! 😋💖 SO much love this morning for this brand and for vegan cinnamon rolls.
Cinnabon used to be my favorite place to walk past in shopping malls because the ovens always smelled SO heavenly. Truthfully, I didn’t enjoy that many cinnamon rolls in my childhood, but when I did, I’d be transported to HEAVEN. 😇☁️ Now I’m so delighted to know that there are vegan alternatives to these treats, plus I can enjoy them when I want to! 🙊💚

Bread-making: I DID IT! I finally finally finally perfected baking the interior of my baguettes. All I have to do now is work on shaping them absolutely PRECISELY, SO precise that the batch looks like Parisian gourmet quality. 👌 Let’s be real. The second and third baguettes are a physical disgrace. 🤦🏻‍♀️
I can confidently say that learning to bake bread is a lot like learning to love fitness. Both take a great amount of patience, attention to detail, and motivation to start. While bread isn’t exactly a “diet” food, it’s definitely one of my favorites. This one is actually a little healthier because there’s no oil and there’s whole wheat flour! 🥖
So yes, this is a fabulous accomplishment—at least for me. Never in my life would I have ever fathomed learning to bake bread in the first place! There’s so much time into mixing, proofing, and shaping the dough. But every minute is SO worth it. And yes, I did take seven baguettes home. 😏

National Chocolate Chip Day done RIGHT. Vegan. Chocolate. Chip. Cookies. 😜🍪🍫
So today I had the most overwhelming lab, and it was overwhelming in the best way. I basically had to take care of four different recipes. My ambition fired at every cylinder and decided to tackle on baking bread and vegan chocolate chip cookies on TOP of whipping up homemade chickpea pasta and vegan butter bean cheese sauce. 🍝🧀 🥖You’ll see in my Instastories how those turned out!
But these cookies: shoutout to @daily_rebecca for this AMAZING recipe—it could not have been more perfect, as all the ingredients were easily found in my college’s food science kitchen! 🙆🏻‍♀️👩🏻‍🍳 What I ADORE about this recipe is that it’s balanced. You still preserve your traditional indulgent qualities from the brown sugar and all purpose flour, but make it healthier by using coconut oil instead of butter and dark chocolate chips instead of milk chocolate! 😄👍
Everyone in my class LOVED these cookies, including my professor! I was beyond elated to have seen the empty serving plate. Lately, life has been pretty dumpy, and today was just a nice sigh of relief. It’s amazing what cooking and trying new things can do. But aside from that tangent, Happy Chocolate Chip Day! It’s been SUCH a long time since I last visited any burger joints and fast food chains. But I’m pretty certain one thing would result if I did so as a vegan: I’d become a French Fry connoisseur. 😆🍟
As a kid, I ADORED French fries from McDonalds and Burger King. In-n-Out? Not so much. I eventually become obsessed with the sweet potato fries from Veggie Grill, but I’ve moved on from pre-made fries and started making my own at home. I love that because you can make as many fries as you wish and use 100% healthy ingredients! 🍠🥔
ALSO, I’ll be using up 25 pounds worth of carrots for the next two weeks or so. Hence, I’ll be expecting to freeze a lot of leftovers, AND see if my skin starts turning orange and I look like an Asian Oompa Loompa. 🙈 But regardless, I’ve been obsessed with carrot fries. They make an amazing snack, but I like to roast more at a time and have a giant bowl of carrot fries as a meal! Dust in cinnamon, turmeric, curry powder, paprika, garlic powder, or cayenne, and you have the best carrot concoction ever! 🥕🐰🌟

When three of the four plates on the table are mine 😂 I TOTALLY underestimated how much food my farmers market plate from @bigskycafeslo consisted of, and I’m not complaining! 👍💛
Last night, I pretty much expected my order to come on one plate that was maybe decently sized or so, and nope, I got three! One had vegan paella, a mixed greens salad with balsamic vinaigrette, and the center plate had gluten free crispy cauliflower, Brussels sprouts, beets, and grilled tofu! Wayyyy too much yumminess in one meal. 😜🥗🍅
Thank you to @marzavar_ for putting up with my weirdo food photography antics and for this amazing night. 😘❤️✨ We watched A Quiet Place, which surprisingly did not terrify me at all—I used to get frightened so easily from jump scares and haunting images, but watching so many of them helps desensitize the scare factor. 🎃👹🧟‍♀️🧛🏻‍♀️👻 I will say though, demonic clowns and dolls are still pretty freaky. And rodents. Gross.

The batter is a blend of white beans, coconut sugar, flour, a little coconut oil, and salt/baking powder/baking soda! You can make this batter in a blender or food processor (I used my @vitamix)! Studying all day unfortunately calls for no epic meals today. I’ve been so busy in terms of work-load, accomplishing lots of tasks, and preparing for the weeks ahead that convenience and minimal time in the kitchen is much needed! 😪📚📖📝
Shakes made with @truenutrition vegan cookies n’ creme protein have been my savior as of lately! I don’t recommend relying on protein powder as your main source of protein, but I chose to enjoy two to save time—one with two pounds of cinnamon carrot fries and a pound of salad greens tossed in nutritional yeast, @traderjoes brown sugar barbecue sauce, a little gochujang, and garlic powder; the second was with three servings of @edenfoods popcorn (mixed in cinnamon) and a 70% dark salted almond @lilys_sweets_chocolate bar. I did eat more food throughout the day but forgot to take pictures. It’s because everything else I ate basically just consisted of apples as well as spoonfuls of sunflower seed butter and The Lion’s Pack cookie dough. 😂🍏🥄🌻🍫🍪🥗🍿🥕🍅
I know these meals look SUPER SUPER boring, but let’s just be real here. I have no time to bother creating more elaborate dishes for the sake of Instagram because priorities...K well then, time to continue writing notes until my hand falls off! 😐📝

So I didn’t get a chance to try as many dishes I’d hope for in my FSN 321 lab because a lot of the recipes weren’t vegan, BUT that fortunately allowed me to roast some Japanese sweet potatoes with homemade baguette sticks to enjoy at home! 😍🥖🍠
The Japanese sweet potatoes are dusted with cinnamon, strawberry preserves, and @nooshbrands birthday cake almond butter, which is the BEST combination in the world! 🍓🎂 Oh yeah, and I could eat another helping of breadsticks. I think these two are my favorite source of carbohydrates, except one is good for the body, and the other one is good for the soul! 👐🤩

French cuisine isn’t a cuisine I really dive into as commonly as Thai, Vietnamese, or Indian, but my FAVORITE French dish—aside from French baguettes, because com on, those bad boys are GLORIOUS 😍🥖—has to be ratatouille. It’s a roasted vegetable medley consisting of squashes, tomatoes, peppers, onions, and eggplant all incorporated in a flavorful tomato pepper sauce. 🍅🍆🌶🍲
When I visited Paris about seven or eight years ago, I basically ate my bodyweight in buttery gluten-loaded carbohydrates every single day. There wasn’t a lot of vegetable-centric dishes during my trip, so I’m pretty sure that ratatouille would be a staple if I decided to return! The @cpfoodscienceclub made some delicious vegan ratatouille today for our second-to-last meeting, and it was absolutely heavenly! ❤️💛 I had to add some pepper and ghost chilies afterwards for even more spice! What can I say? I’m now a spice fanatic. 🌶😈

Man these past couple weeks have been CRAY! On the go lunches have been my go to lately, tgod for (delish) leftovers & HUGE bags of greens from Costco😍 Meals are one thing you have total control of, even if you don’t think you have enough time, so why not make it easy on yourself and prep ahead!
