Holy leftovers Batman. Thanks @markbittman for these autumn burgers from the original how to cook everything vegetarian! It's been one of my most loved books for the past half a decade. We made a double batch with kale and fried cabbage and have been eating them for three days. Yesterday I did THREE sessions at the gym (#climb#lift#parkour) so by the time we got home, I could barely put a plate in the microwave. They were great alone, with the pictured chipotle tahini sauce, and also with homemade caramelized onions and balsamic hummus.
