In class today, Spaghetti alla Carbonara, luscious and wonderfully indulgent. The ingredients are simple - just spaghetti, pancetta or bacon (we’ve used halaal bacon or breakfast beef) eggs, Parmesan, a little olive oil, salt and pepper. The crispy and salty breakfast beef adds all the flavour, the egg yolks creates a velvety and lush sauce. This is one of those dishes that just affirms that Italian food is simple, uncomplicated food. Never thought I’d love this dish as much as I did!
