200 gram Arpa unu

2 tatlı kaşığı tuz (Tütsülenmiş Deniz tuzu kullandım rengi o yüzden kahverengi sonradan döktüğüm suyun)
20 gram su
100 gram karışık tohum ve çekirdek İçi
Bu hamura 50 gram daha su kullansam iyiydi.
Un Su Ekşimayayı karıştırıp 10 dakika yoğurdum.
1 saat Sonra 20 gram su 2 tatlı kaşığı tuzu ilave edip 10 dakika daha yoğurdum.30 dakika Sonra üstüne çekirdek içini boşaltıp ilk katlamayı yaptım. Her 30 dakikada bir 2-3 katlama daha yaptım. Katlamaları hamurunuzun hacimlenmesine göre ayarlayın. Bir kaç baloncuk görürseniz tamamdır 3 katlama yeter.
Tahtaya alıp 2 ye böldüm katlayıp üstünü nemli bezle örttüm. 30 dakika bu şekilde bekledi. Hamuru ters çevirip katlayıp bez serili sepete aldım hiç un serpmedim. Buzdolabı poşetine geçirip ağzını yapışmayacak şekilde sıkıca bağlayıp buzdolabına kaldırdım. 7 saat Sonra baktım pek kabarmamış biraz daha beklettim Buzdolabında.15 saat Sonra biraz kabarmıştı. Fırını Tencereyle birlikte 240 derecede 30 dakika ısıtıp soğuk hamuru sıcak tencereye çevirip çizip kapağını kapatıp fırına verdim. 40 dakika kapaklı üstü kızarana kadarda açık pişti.
Çekirdeklerin içindeki kahverengi şey teff tohumu Türk tv de görmüştüm çok sağlıklı diye fındığımsı hafif bir tadı var.

Besides that it has become also a common motif in art and a cultural symbol. For example, when young men went to the army, their girlfriends gave them two keepsakes (a carnation and a rosemary twig). It almost disappeared due to its delicate nature but was successfully restored by the Slovenian tourist board. You understand now that I couldn't turn down this challenge, right 😇See for yourself if I succeeded😉 *

I would never have guessed I would get so into baking sourdough bread. I originally started as I thought it would be a good way to use the leftover whey from my yoghurt. I used whey in my first bake and it was a complete failure so I've been using water ever since. I still like the idea of minimizing waste so would like to give it another go at some stage. Has anyone else tried it, and how did it go?
