Cucumbers and chamomile.
I love to make my own pickles.
These are quite simple and are made with what is known in Dutch as “oerkomkommers” . The word “oer” basically brings up visions of something “ancient” whereas “komkommer” is easily relatable to the English word cucumber.
The name makes sense as the outer skin of this particular vegetable is coarse — even rough and bumpy.
The flavor and texture of these specimens of nature are decidedly crunchy.
I soaked my sliced cucumbers in a warm vinegar bath made from sherry vinegar and raw cane sugar.
I then added fennel seeds and chamomile blossoms.
My pickles are marinating at the moment, getting ready for the weekend.
Somehow I prefer the Italian name “sotto aceto” when referring to marinades with a vinegar base as it sounds more appealing than its English equivalent.
If I could I’d spend all my days marinating and filling jars with beautiful vegetables.
