Not all Champagne is sparkling!
Most Americans probably learned from Christopher Walken on @nbcsnl that only sparkling wine from the geographical area of Champagne in France is technically "Champagne" and everything else is just sparkling wine. America is, of course, not subject to E.U. law so consumer confusion persists. Only respectable producers - or producers seeking international respect - label their wines appropriately in America.
But in Champagne, there is a long history of still wine - the now synonymous bubbles were originally considered a flaw! As climate change persists, and the winter temperatures that originally arrested fermentation to create bubbles is lowering, will Champagne decrease the lots of Pinot Noir and Chardonnay that get iconic effervescence? Only time will tell.
Coteaux Champenois, the term for still (not bubbly) wine in Champagne, is still ageworthy, unique, and fascinating.
