Before, I did not know how to cook softshell crab, but thanks to the internetz, I know now how to clean and cook these delicious crustaceans. These are mud crabs from Indonesia. Softshell crabs are basically any type of crab that just molted or shed its old shell. The secret here is lightly dredge them in flour and fry (shallow or deep) until crispy. Served this with a classic tartar sauce.
