A yummy bowl of buckwheat soba soup noodles just made me sooo happy!! And the perfect onsen/soft boil egg is just the cherry on top ๐Ÿ˜‹ The simple trick to that is simply to boil(simmer) the egg for 7 minutes from boiling point. The broth is Japanese inspired miso soy milk broth with dashi and its completely vegan! Here's the recipe for the broth, try it, its rich, creamy and delicious, you wont believe that's it's vegan! ๐Ÿœ๐Ÿœ๐ŸŒฑ๐ŸŒฑ
Ingredients:
Minced Ginger x 2 tsp
Minced Garlic x 2 tsp
Sesame oil x 1-2 tbsp
Chinese Fermented soy chilli paste x 1 tbsp
Miso paste x 2 tsp
Sake rice wine x 1 tbsp
Soy sauce x 2 tbsp
Sugar x 1 tbsp
Salt x 1 tsp
Sesame seeds x 1-2 tbsp
almond butter (Meridien) x 1 tbsp
Chinese shiitakes dried mushroom x 3
Japanese kelp/kombu x 20g
Organic soy milk x 1 cup (225ml)
Method:
1. Dashi broth is the base of the broth. So to make dashi, soak the dried mushroom and kombu in room temperature water for 20 mins. Then boil them for 5 mins. Drained and retain the liquid which is dashi. You should yield about 350ml of dashi. Add more water to make it up if not
2. Grind the toasted sesame with a mortar and pestle or grind in food processor until they become fine crumbs
3. To develop the broth, In the cast iron pot, add the sesame oil, stir in the ginger & garlic, when they turn golden, stir in the chilli paste and miso, stir evenly, then add the sake, soy sauce, sugar, followed by the sesame crumbs, almond butter, soy milk and dashi broth.
4. Bring it to a boil and boil in medium heat for 3-5 minutes until the broth have thickened and looks creamy. Season with salt and there you have it!
