These No Bake Energy Bites are perfect for an easy snack to prep for the week! I have seven flavors for you over on the blog and they were soooo fun (and delicious) to test...I love the mocha and trail mix bites the best...but it’s hard to choose! .
S’mores Energy Bites
1 tablespoon coconut oil
1/3 cup peanut butter
1/4 cup maple syrup
1/2 cup + 1 tablespoon old fashioned oats
2 tablespoons chia seeds
1/4 cup ground flax
1/4 teaspoon ground cinnamon
1/4 cup graham cracker crumbs plus more for rolling
1/4 cup chocolate chips
1/4 cup mini marshmallows
In a microwave safe bowl, melt the coconut oil. Stir in the almond butter and maple syrup, until smooth.
Stir in the oats, chia seeds, ground flax, cinnamon, graham cracker crumbs, chocolate chips and mini marshmallows
Roll into 1 tablespoon balls.
Roll the balls in the reserved graham cracker crumbs.
Store in the fridge for up to a week or the freezer for up to 3 months.
