Pan Seared Mahi Mahi with Pomegranate Peach Salad & Raita.
Salad Ingredients * 1 pomegranate * 1 peach cubed
* 1 tomato cubed
* 1 avocado sliced
* 1/2 cucumber sliced
* 1/4 cup broccoli florets * 1/4 cup red onions sliced
* 1/4 cup cashews * 1/4 cup smoked gouda cheese cubed
* mint and lemon on the side
Mix all ingredients together.
1/4 cup plain greek yogurt
1/4 tsp smoked paprika
1/4 tsp cumin powder
1/4 tsp black pepper
pinch of salt
Mix all ingredients together
Pan seared Mahi Mahi Ingredients * 4 pieces Mahi Mahi
Marinade * 1 freshly squeezed lemon
* 1 tsp freshly grated ginger
* 1/2 black Pepper * 1tsp hoisin sauce * 1tsp low sodium soy sauce * 1tsp teriyaki sauce * 1tsp sesame seed oil
Mix marinade ingredients together, then marinate mahi mahi for 1/2 hour.
Heat skillet with grape seed oil, once hot add fish to the skillet and allow to cook on medium high heat for about 3-4 minutes. Flip mahi mahi and cook for another 3-4 minutes.
Remove from heat and serve on a bed of romaine lettuce with pomegranate peach salad & raita on the side.
