Last night’s dinner was outstanding...if I do say so myself! 😜 Best pasta I’ve made in ages!
This beast was 💯% gluten and dairy free, made using a combination of brown rice and green pea pasta from @morrisons with loads of leeks, mushrooms, smoked bacon, garlic, shallots, tarragon, smoked @maldonsalt and black pepper, and lashings of organic extra virgin olive oil.
I added an @saykallo organic gluten free chicken stock cube to the water when boiling the pasta which added an extra umami dimension and I put a few spoonfuls of the boiling liquor back in the pan when I mixed everything together to add a creamy consistency and extra flavour.
I then finished with another drizzle of extra virgin olive oil, some more black pepper and smoked sea salt to season, and finally some toasted pine nuts.
Luckily I have some leftovers for my lunch today...nom nom! 🥓🍗🍄🌱🍝😋
