my 18 year old is staying local for college & going to SDSU, & living home until he flies the coop. what this means for mom (me), is hearing "I'm going out, just leave some dinner out for me", lots of Saran-wrapped dinners, and waiting up until I hear him come home. •
tonight, he'll come home to baked ziti & banana bread. •
you'll need.... for sauce:
(2) 28 oz. cans tomatoes
1 can tomato paste
2 tbsp. olive oil
1/3 cup chicken or beef broth, or water
4 cloves garlic, minced
2 tsp. onion powder
dried herbs: 1 tsp. each thyme, oregano
fresh herbs: basil, 6 leaves
1 tsp. fish sauce
1 tsp. coconut aminos
2 tsp. sugar
salt and pepper to taste...THEN ADD
1 container of fresh mozzarella in water/brine (drained)
Parmesan, grated (from a block of Parm, preferably)
(1) 16 oz. package of ziti or other tubular noodle
cook all sauce ingredients on low heat for 45 minutes, slow cooker for 3 hours, or pressure cooker on high pressure for 30 minutes.
when sauce is done, purée.
preheat oven to 350.
in boiling, salted water (with a little olive oil added), cook ziti al dente . drain.
mix cooked pasta, sauce, fresh mozzarella and grated Parmesan in 350 degree oven until done, about 20 minutes. * for added protein, add collagen protein powder to tomato sauce while cooking.
