Chickpea burger for Bean-Day #26 which I threw together in a few minutes and served with the Trader Joe's Super Spinach Salad with edamame, pumpkin seeds and a carrot ginger miso dressing.
Recipe for Chickpea burger-
Canned, drained chickpeas
Onion, 1/2 cup or so chopped
Garlic, 4 cloves chopped
Chile powder to taste
Chickpea flour, 2 tablespoons (I actually substituted some dried falafel mix I had in hand since I didn't have chickpea flour)
Blend all ingredients in mini food processor or big one or blender. Firm into 2 or 3 patties. Place olive oil in hot cast iron skillet and when it's hot but not smoking, fry the patties, about 4 minutes on each side.
