Try this: Baby back pork ribs (Farmer Johns much leaner than Kansas City and Bristol Farms leanest (but most expensive) of all; the Greenest Green Salad (New York Times magazine 4-29-18) with snap peas, cucumber, taragon; my concoction of black lentils mixed with sautéed riced cauliflower; and of course CORN, my favorite, which I par boiled, the rubbed with olive oil and chili lime seasoning and placed on BBQ just before serving then brushed on tarragon in oil. There you have it! No complaints!

Purée of asparagus soup, made it myself. Great way to get my vegetables.
1 bunch asparagus, cut in 2 inch pieces
1 onion, chopped
2 tablespoons olive oil
1-2 cups vegetable or chicken stock
1. In a nonstick pan, not too shallow, heat a couple tablespoons olive oil and sauté onion and asparagus for 3-5 minutes or till tender.
2. Add 1 cup stock (or water) and cook in medium heat for 10-15 minutes.
3. Purée in blender. Add more stock or water according to desired consistency.
4. Season with salt and pepper.

Tonight's dinner: do you know how fast and easy it is to bake cod? 10 min in 450 degree oven drizzled with olive oil, salt and pepper; while its cooking, sauté whatever you have (chopped onion, garlic, celery, carrot) and add a can of drained and rinsed cannellini beans, season with Italian seasonings- basil, oregano etc. Add vegetable stock or water to desired consistency. Serve with a bit of a salad drizzled with olive oil and lemon and use other half lemon to season with cod. Divine! Whole food cooking. What's not to like?

Taco night....never the same taco twice- this one used green onions in the Pico de gallo with cherry tomato, cilantro, lime. Guacamole- my usual, avocado, chopped fresh garlic, squeeze of fresh lime juice-NOTHING MORE. Beans- I used canned black and canned pinto since that's what I had on hand. Worked out beautifully with the small tortillas which I grilled in a cast iron skillet with canola oil.

Here's my morning smoothie set up at my office. Willpower is overrated. It's planning and repetition that create a habit!👌👗💄
1 cup unsweetened kefir
1 scoop whey protein powder
1/2 cup blueberries
1/4 banana
1 tablespoon almond butter
2 teaspoon ground flax seeds
Place all ingredients in an old fashioned metal milkshake can ($3 from Amazon) and blend with hand held blender. (Comes apart so easy to clean at office.). Easy, delicious, nutritious!

It's Bean Day #30!👌👙💄😇not to mention Presidents Day which gave me a little extra time to make the 30/30 day of bean commitment extra special so I cooked a pot of black beans (no cans!) and turned it into Black Bean Cakes ala Deborah Madison's Vegetarian Cooking for Everyone which was simply black beans with cumin, cheese, onion, cilantro, lime. Served these burgery delights with sautéed, riced cauliflower (plenty of onion and olive oil with a dash of salt). Then for greens I sautéed some fresh spinach in olive with chopped garlic. Doesn't get better than this! Proves that healthy food can look good, taste good and be good for you!

I ate the burger with cheese and half the fries (and a glass of wine!) and left behind the bread and half the fries.

Chickpea burger for Bean-Day #26 which I threw together in a few minutes and served with the Trader Joe's Super Spinach Salad with edamame, pumpkin seeds and a carrot ginger miso dressing.
Recipe for Chickpea burger-
Canned, drained chickpeas
Onion, 1/2 cup or so chopped
Garlic, 4 cloves chopped
Chile powder to taste
Chickpea flour, 2 tablespoons (I actually substituted some dried falafel mix I had in hand since I didn't have chickpea flour)
Blend all ingredients in mini food processor or big one or blender. Firm into 2 or 3 patties. Place olive oil in hot cast iron skillet and when it's hot but not smoking, fry the patties, about 4 minutes on each side.

Sun-day - Bean-day #22! You're not going to believe this but I dreamed about beans last night! Had to make this crostini appetizer (lunch for Charles) toasted baguette topped with Trader Joe's red pepper spread with eggplant and garlic topped with great northern white beans (canned, drained, rinsed - decreases sodium by 40 percent) sautéed with garlic and topped with arugula. Made a special trip to Bev Hills farmers market this morning to get the most peppery arugula for the final touch!
