Meet the Taste Renaissance 2017 Chef Collaborative team! "Chef Alan Maniscalco is originally from San Jose, CA. He is Executive Chef at Rally Pizza, making nearly everything in-house, including hand-pulled mozzarella, ricotta, smoked meats, sauces, preserved chilies, and more. Alan started his culinary career over 20 years ago in Portland and has worked as a baker, cook, consultant, and pizza maker with many exemplary food artisans, including redesigning the in-house artisan bread program for Whole Foods Market’s Midwest region and ten years as Chef and co-founder of Ken’s Artisan Pizza.
Chef Shan Wickham grew up in Des Moines, Iowa, baking with her mother and grandmother, and eating ice cream every day from the shop across the street from her house. She followed her passion for dessert and graduated from the California Culinary Academy for baking and pastry. Over the past 20 years, she has worked as a bread baker, bakery manager, specialty food sales manager, and restaurant pastry chef, including seven years at Ken’s Artisan Pizza. In addition to serving as General Manager of Rally Pizza, Shan’s pastry skills are seen in the soft-serve French vanilla frozen custard served with her house baked goods mixed in to create the Midwest favorite treat, the ‘concrete’."
