Over the weekend I've been thinking about all the trips I have taken so far on this journey and the different production methods and spaces all these incredible artisans work in. This little workshop at the back of a village butchers is the space that has captivated me the most. The lighting was beautiful for photos which made it even more spellbinding. The musty smell of curing meat was intense and the usual raw pork smell was much less prominent. To meet such a forward thinking couple in such a remote Tuscan village was humbling and inspiring. It's been amazing to go and see things first hand, but now I'm thinking about some trips closer to home. There are a few places on my hit list, but if anyone has any recommendations for small scale producers in the UK, I'd love to hear them. It doesn't have to just be meat either. Anyone with a story to tell and a vision for sustainability, for artisan production, good animal welfare or just a passion for good produce - I'm interested.
