Fresh from the tandoor, yeasty Kulcha dunked into a rich bone broth, Nehari flavoured with just the right amount of garam masala. A breakfast preparation slow cooked overnight.
Rahim's Kulcha-Nehari in Chowk, Old Lucknow is one of those humble food destinations that earn their popularity solely through memorable food.
This picture was taken over a year ago but the flavours of this Nalli-nehari are still etched in my memory. The secret is in its rich stock and well balanced spices. The masala doesn't over power the flavours of the mutton. The stock is made rich with slow cooking the leg. The marrow simply melts in my mouth.
A good bone broth helps cure a cold and is a great source of calcium. Marrow from the Nalli is good for iron.
