In the off season, most bodybuilders bulk up by going crazy on the calories. The school of thought behind it is that the extra calories would maximize the amount of muscle they can gain, and number of them start holding quite a fair bit of bodyfat during this period. I wouldn't say this is the wrong approach, it is just a different way to go about it and every good bodybuilder have their methods.
Personally, I prefer not gaining too much bodyfat in the off season. I feel my body becomes less efficient in terms of recovery and performance when my bodyfat gets too high. So how do I keep my bodyfat in check while bulking? A diet that is high protein with reasonably high complex carbohydrates are fundamental.
Getting sufficient amount of protein can be a challenge. I need about 250grams protein daily. To put it in perspective, you need to consume over 1kg of chicken meat just to get that much protein. To get away with eating less meat, you could make up for some of that protein with a good protein supplement.
