Creamy chicken tikka....even on prep!!! Instead of using coconut milk I used unsweetened almond milk and thickened up the sauce with some @meridianfoods cashew butter.... deeeeliicious!! Macros for one serving without rice... 7C 28P 7F
For 4 servings.. *480g chicken breast raw *350g Passata (sieved smooth tomatoes...)
*2 tbsp (30g) @meridianfoods cashew butter
*125ml (1/2 cup) almond milk
*1/2 to 1 tsp Pink Himilayan Rock Salt
*1/4 to 1/2 tsp cayenne pepper
*1 tsp paprika
*1 tsp garam masala
*1 tsp garlic powder
*1/4 tsp ground ginger

Blend all sauce ingredients together.
Saute or boil/poach chicken breast.
Add sauce and chicken to a pot and leave to bubble for about 10 to 15 minutes over a low heat. Curry tonight...
This is defs the best curry I've ever made! Ask Pops & she'll tell you that it's not...but don't listen to her!
It was so good that I couldn't stop eating it! I ate what she didn't eat too!
Poppy ate the broccoli & rice & at least tasted the curry. Ivy ate everything! 🙌🏻
I used a similar recipe to what I've posted before but changed it up slightly...
In my slow cooker I mixed...
- 1 cup split red lentils
- 1 can coconut cream
- 700g jar passata
- around 1/2 cup water
- 2 tsp cumin
- 3 tsp turmeric
- 1 tsp garam masala
- 1 red onion
- 4 garlic cloves
- 1/2 cauliflower chopped into large florets
- 1 small head of Tuscan kale
- 1/2 large sweet potato
...& put it on low for 5 hrs.
So, so, soooooooo yummy!! 😋

Bendekayi hasi gojju / Ladies finger gravy for chapati /rice (no onion, no garlic recipe)

This is my all time favorite 😋 It reminds me of childhood days as this is the 1st ever gravy /curry I had cooked 😊 It's very easy and takes just about 2-3 main ingredients.. Preperation Time : 15 minutes
Cooking Time : 15 minutes
Serves : 5-6

Ingredients
1/4 kg ladies finger / Okra

To grind
1 cup grated coconut
3-4 green chillies
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp urud dal
A lemon sized tamarind
1-2 tsp jaggery powder (optional)
Salt to taste
Water to adjust the consistency
To temper
2 tsp vegetable oil
2 red chillies
8-10 curry leaves
2 tsp mustard seeds
Pinch of Asafetida

Method
Grind all the ingredients from 'to grind' section. Keep it aside. Finely chop ladies finger into thin dices and keep it aside.

In the heavy bottomed pan add 1 tsp vegetable oil. Heat it in medium flame and add chopped ladies finger. Add 1/2 tsp salt which helps in releasing the water and drying out the gooey substance. Mix well and turn the flame to low. Let it cook until the raw smell goes away and are no more sticky. Keep stirring it in between. This step may take anywhere between 8-10 minutes.
After this add grinded paste and mix well. Add water if required. Let it cook with covered lid in low flame for 5-7 minutes.
Prepare the tempering by adding 2 tsp vegetable oil to the tempering pan. Once it is hot, add mustard seeds, once they start to splutter add asafetida, red chillies and curry leaves. Switch off the flame and mix them well. Pour it over the gravy and cover the lid. Let it rest for 5-10 minutes and mix it well.
Serve it with steamed rice or hot chapati 😋

Chickpea curry:
1/2 red onion
2 handfuls of sliced up and 9/oven roastedoated cherry tomatoes (Roastes in
1 tbsp coconut oil - heated and melted in tray
1 tsp ground garlic
A sprinkle of sea salt
1 tsp dry rosmary)
Curry paste (see previous post or DM for recipe)
1/2 bag spinach
A handful of fresh chopped basil
Another handful of fresh chopped coriander

Served with rice - will be making another version with fragrant rice, this one was just normal with a little quinoa mixed in for extra carbs :| Oven roasting tomatoes increases their lutelin levels! Do it!

Eerulli gojju / Coconut based Onion Gravy for rice

Cooking Time : 20 minutes
Serves : 4-5

Ingredients
4-5 medium sized onions
2 tsp vegetable oil
8-10 curry leaves
2 tsp mustard seeds
Pinch of Asafetida
To grind
1 cup grated coconut
Small lemon sized tamarind
2 byadagi chillies (for the color)
2-3 Kashmiri chillies
1 tsp cumin seeds
1 tsp mustard seeds
1-2 tsp jaggery powder
1 tsp turmeric powder
Salt to taste
Water to adjust the consistency
Method
Soak tamarind for ten minutes and extract the juice. Grind all the ingredients from 'to grind' section. Keep it aside. Finely chop onions and keep it aside.

In the heavy bottomed pan add the oil. Heat it in medium flame and add mustard seeds. Once it starts to splutter, add asafetida and curry leaves. Mix well and add in chopped onions . Mix well and turn the flame to low. Keep stirring and sautéing until onions turn translucent. This step may take anywhere between 8-10 minutes.
Once raw smell is gone and onions turn translucent add grinded paste and mix well. Add water if required. Let it cook with covered lid in low flame for 6-8 minutes. Keep stirring it in between.
Serve it with steamed rice. Add a tsp of oil on top to enhance the flavour 😋 . . . . . . . . . . .

Peperomia Pellucida /Vietnams Crab Claw Herb /Neer kaddi in kannada.

Peperomia pellucida has been used as a food item as well as a medicinal herb. And used in raw salads and in cooked form. With bright shiny green leaves, watery stem and flavourful.
Here i did seasoning by adding coconutoil,mustard,urad dal,hing,curry leaves,chopped green chillies.
When chillies starts wilting,added chopped chopped pepperomia herb and tossed until it wilts. Sprinkled with salt and kept aside.
When it is cool, added thick curd ,chopped onions and garnished with chopped coriander. Best side dish with rice or parata on sunny day.

CREAMY BUTTER CHICKEN CURRY WITH EGG AND VEGETABLE FRIED RICE 👩🏽‍🍳 Duration: 50 mins
Difficulty: Easy

Ingredients: Chicken, Maggi Creamy Butter Chicken Mix, (Brown) Rice, 1 Egg 🥚, 1 Pepper 🌶, Cherry Tomatoes 🍅, Onion.

How to:
00:00 Heat the oven to 180C and put the chicken 🍗 into the Maggi bag

00:15 boil some water and add into a pan with rice 🍚
Chop your peppers, onions and tomatoes 🍅

00:35 fry your veg into a pan
00:45 add the rice and stir, then crack an egg into the mix and stir immediately

00:50 take the chicken out of the oven. Put the rice onto a plate then add the chicken (alternatively just mix the chicken in the pan then serve)

Tomato gojju / Tomato Gravy for rice (no onion, no garlic recipe)
This is my all time favorite and my mum makes it the best 😋 It's very easy and takes just about 2-3 main ingredients.. Same recipe can also be used for making onion gojju, just replace tomatoes by onions 😊

Simple crab curry
Ingredients:
Crab, Chinese cabbage, yellow and green bell pepper, black pepper powder, spring onion, green pea, garlic, oil, salt and water.
Steps:
1) Clean and wash the crabs well and keep aside.
2) Heat 1tbs oil in a pan and saute the spring onions bulb and garlic paste for few min.
3) Add green pea, salt and cup of water, cook for 5 mins.
4) Now add the crabs, cook for 5 mins then add Chinese cabbage, bell pepper, spring onion and black pepper powder.
5) Cover and cook on low heat for about 5 mins.
