Happy Sunday, which for most people is meal-prep day! Here is a great energy ball recipe to add to your prep 🙌🏼🤗 it is SIBO/Paleo/Low FODMAP friendly and everything else inbetween. I’m talking vegan, free of refined or added sugars, grain free, gluten free, the list goes on and on. Basically no matter what type of diet you eat, you can make these babies 😜 I’ve been talking to a lot of people who approach me about how they’ve began changing their diet habits to heal their bodies in some way. One woman I talked to the other day started a paleo type autoimmune diet to heal pain in her foot. And guess what, she’s been pain free since starting. ✨let food by thy medicine✨ there is no truer statement than “you are what you eat”. Find a way of eating that makes you feel your best! Eating paleo and doing the sibo-specific diet ~healed~ my digestion issues and I want you all to see how much your diet correlates to your health! .

RECIPE: all thrown in a blender than formed into ballz.
✨1 cup raw almonds .
✨ 1/2 cup raw pecans .
✨ 1 cup pitted, medjool dates .
✨ 2 tbsp nut butter .
✨ splash vanilla extract .
✨ 1-2 tbsp cacao powder .

Last night, I asked Julien for some Instagram inspiration. He lifted up the lid on our @lecreuset cast iron and I immediately asked if we could photograph.
Pork loin (dry rub of samar, salt and pepper, and whole garlic cloves shoved into the loin), cherry tomatoes from our volunteer plant and fresh curly parsley.
Julien pan seared the loin, added tomatoes and let it cook for about 5-10 minutes with a lid on. Then finished it in the oven at 325 for about 10 minutes. Served this up with roasted delicata squash and a simple kale, spinach and avocado salad.

Today I get to reintroduce peanut butter & see if I can tolerate it! So excited!

A sweet note I got from my sweet friend Jen ❤️🌹There is something really special about doing what you're passionate about in life. Something comes alive within you and around you that can't be seen or touched or taken away... When I was really unwell, my inspiration to keep going was deep down knowing that things would eventually get better and there was a solution out there somewhere that would bring me closer to a "normal" life again. My other inspiration to get past it all was to eventually help others who are going through a similar thing I went through. With persistence, faith, support and the grace of God or the universe (w/e you want to call it) I feel I have made it through to the other side and am able to be there for other people more. Sometimes I worry I won't do a good enough job helping others or that I don't know enough, but getting notes and messages like these really help quiet that inner critic. It also reminds me that you don't need to be a wizard at knowing everything to help someone - sometimes you just need to hold a space, listen, have compassion, and be an example. I'm very grateful that I can do this in my day to day life now, that people even ask me for help, I'm grateful for my experiences, my teachers, and for information from @medicalmedium to help me help others with info that I can trust. Im also so thankful for the supportive souls who help keep my cup feeling full 😉😘 Life becomes better when I help myself, but life becomes extraordinary when I help others. ✨💗🙏🏻🕊☀️🌸

Today’s colourful lunch 🥗
It’s so important once you pass the elimination stage on the fodmap diet to slowly try and reintroduce some foods back into your diet.

Today’s salad has roasted sweet potato, roasted chickpeas, spinach, rocket, cherry tomatoes, capsicum and cucumber 🍅🥒🌶🥗🍠 I used 1/4 cup of drained and rinsed (super important step) chickpeas, which is the allocated safe serving size outlined on the fodmap app. Legumes are so important for not only your gut health, but your general health too and I’m going to be trying very hard to be incorporating them back into my diet in larger quantities! Plus they’re a great source of plant-based protein 💪🏻 this salad was the perfect refuel post workout.

Pumpkin cookies 😏 because I'm in the mood🍁I really wish I had an exact recipe for these, but I used about 1 3/4 c almond flour, 1/2 c coconut flour, 3/4 c canned pumpkin, 1/4 c coconut oil, 1 egg, 1/2 tsp pumpkin spice, 1/2 cinnamon, 1/4 tsp salt, 1/4 tsp baking powder, 2 tbsp coconut sugar. They were gluten free, super low sugar, and so delicious. The perfect way to satisfy my fall mood💯

Brain fog? 🙄THESE ARE SIGNALS. The smoke. The alarm. The time we start paying attention, is the moment we can begin to heal.

Making a mundane Monday more fun with Chicken Zucchini Poppers & Dill Dressing for dippin'. Poppers - by Emily over at onelovelylife.com, I skipped the garlic & the pepper.
Dill Dressing - from The Healing Kitchen cookbook. I skipped most of the herbs and just added 2 tsp of dried dill, 1 tsp dried parsley, 1/2 tsp of dried tarragon, big pinch of sea salt.

All this jarring has me inspired to preserve as much pantry staples as I can, especially when food is at its prime. That being said, I will be jarring a little something every day 🥕🍅🍆This is pickled eggplant in olive oil, an Italian classic #canning #preserving

Looking back on my disordered eating and the restriction I endured "in the name of health" makes me sad. Not mad or resentful, just sad for my poor little sick self.
Adding more things in has brought me more joy and overall health.
If you are knee-deep in restriction I'm sure you won't "hear" this message... I know I didn't...
But for those on the other side I post this as a badge of honor of how far we've come!

Yup. This just happened. Grain, dairy and refined sugar free Apple Pie. Nut-free and vegan options ✌🏼

Recipe for 1 mini pie:
.
Pie crust:
1 1/2 cup almond or oat flour
1/4 cup tapioca flour
1/4 cup coconut flour
1 egg or flax egg
2 tbsp honey or maple syrup
3 tbsp coconut oil
1/2 tsp vanilla
Pinch of pink salt
.
Applied filling:
2 organic apples, peeled and sliced
1 tbsp lemon juice
1 tbsp coconut sugar
1 tbsp honey
1 tsp cinnamon
Pinch of ginger and allspice
.
Mix the dough ingredients and separate into two halves. Refrigerate in plastic wrap.
Mix all filling ingredients in a large bowl. Roll out the dough putting the first half as the pie bottom. Add the filling and lay dough strips from the second half of dough on top. Just go ahead and eat the excess at this point 👌🏼
Bake at 350F for about 25 min or until the crust is golden and the apples are soft. Enjoy! .
