Shukto - A Perfect Palate Cleanser
Spring is approaching. Our appetite would lessen with the increase in external environment's heat. For 2-3 weeks we wont feel hunger. Its the body's natural mechanism to release insulating fats. Our stool would be slimy ( mucus being eliminated), muddy as liver starts to purge. Feeling feverish with running nose and scratching throat is common at this time.
Now if noticed, you will see craving for bitter, astringent veggies/fruits/herbs at this time. These are excellent to cleanse the body and prepare for the warmer months approaching.
About the dish: Shukto is an unique vegetable medley relished by Bengalis for centuries especially in this seasonal transition. Bitter gourd is the star ingredient of this dry-ish dish. Other must have veggies for this recipe are sweet potato, brinjal, drumsticks, raw papaya and green plaintain. Every family have their signature spicing system for the recipe. At our home, we temper with wild celery seeds, mustard seeds, aniseed and fenugreek seeds. Also, we add fried lentil badis. Never miss to add ginger paste and no chillies or turmeric please!
